Do you know how to fry foods using pork rinds/skins?

I've recently started a low carb diet and I read somewhere that you can alternate the flour for pork skins when frying foods like chicken. It's supposed to give it a nice coating and crunch. Has anybody ever done this? How does it work? A recipe would be greatly appreciated.

  1. Just take your favorite recipe for anything fried, and substitute the flour for crushed up pork rinds or cracklins. Cook in the exact same way as the recipe calls for.

    Will taste more...porky, but not bad. I've done it a few times.

Crush the pork rinds very fine.  I use a blender.  Add dry herbs and seasonings to taste while blending the rinds.  Beat an egg with about a tablespoon of heavy cream and a little water.  Add liquid seasonings to taste while beating the egg.  Dip the chicken in the egg mixture, then coat heavily with the rinds.  Deep fry or pan fry in 1/2 inch of oil until done and crispy.

  3. When a friend was on the Atkins diet I crushed the pork rinds and coated chicken or pork chops with it and fried it just like I would do with flour.  It spattered a bit more, but turned out just fine!
