  3. Kielbasa and Napa Cabbage

    1 lb. kielbasa (Polish sausage)

    1 onion, thinly sliced

    1 small head Napa cabbage, coarsely shredded

    2 apples, peeled, cored and sliced

    1/2 tsp. salt

    1 tsp. caraway seeds

    2 cups chicken broth

    Cut kielbasa into 2" chunks. In a slow cooker, arrange alternate layers of sausage with onion, cabbage and apples. Sprinkle with salt and caraway seeds. Add broth. Cover and cook on LOW 5-6 hrs. or until cabbage is tender. Serve with a slotted spoon to drain off liquid.


  4. *Saucy Lima Beans with Kielbasa

    3 cans butter beans or Lima beans, drained

    1 can tomatoes

    1 onion sliced

    1 green or red bell pepper sliced

    1 (14 oz.) bottle ketchup

    1 cup brown sugar

    12 slices bacon, fried, drained, and crumbled

    1 pound kielbasa, sliced

    Mix all ingredients together in crockpot.Cover and cook on low 4 to 5 hours, or on HIGH for 2 1/2 hours.

    *Kielbasa Burritos

    2-3 potatoes peeled and diced.

    Salt & Pepper to taste

    1 Kielbasa sausage cut into 1 inch chunks or sliced circles

    1 small onion diced

    Fresh Broccoli or Chopped Cabbage (we alternate when making this recipe)

    1 can of refried beans (medium sized)

    Flour tortillas (Burrito Size)

    Start by adding a tbsp of oil to a large skillet or pot.

    Add potatoes and onion; sprinkle with a little salt and pepper, cooking unitl potatoes are almost cooked through.Add Kielbas and Broccoli or Cabbage mixing all ingredients together. Cook until Sausage has been browned and vegetables are cooked enough for your liking.

    Serve Kielbasa mixture and refried beens burrito style or just use the tortillas on the side.

    *Kielbasa in Polish Sauce

    12 ounces light beer

    1 1/2 cups water

    2 cups chopped yellow onions

    2 pounds Kielbasa sausage, links

    Salt

    Freshly ground black pepper

    2 tablespoons butter

    2 tablespoons flour

    2 tablespoons white vinegar

    1 tablespoon sugar

    2 tablespoons finely chopped parsley

    In a saucepan, over medium heat, combine the beer, water, onions and sausage. Season with salt and pepper. Bring to a boil, reduce to a simmer and cook, covered, for 25 minutes. Remove the sausage from the pan and cool. Slice the sausage into 1 -inch pieces. In a large saute pan, over medium heat, melt the butter. Stir in the flour and cook for 4 to 6 minutes for a light brown roux. Stir in the vinegar, sugar and the reserved beer and onion mixture. Season with salt and pepper. Bring the mixture to a boil, reduce to a simmer and continue to cook until the sauce coats the back of a spoon, about 15 minutes. Add the sliced sausage and continue to cook for 5 minutes. Garnish with parsley.

    *Grilled Split Kielbasa Reubens with Warm Mustard-Caraway Sauerkraut

    1 teaspoon caraway seeds

    1 pound sack sauerkraut, drained

    1 cup beer or apple cider

    1/4 cup spicy brown grainy mustard

    2 sticks or 1 long folded link kielbasa or turkey kielbasa, 1 1/4 pounds

    1/4 stick butter, softened

    8 slices marble rye bread

    8 slices Emmentaler or other Swiss cheese, deli sliced

    1/2 cup sweet red pepper relish

    Preheat a griddle pan to medium-high.heat.Heat a small skillet over medium heat. Toast the seeds a couple of minutes then stir in sauerkraut, beer or cider, and mustard and simmer 10 minutes.Cut kielbasa into 4 portions and split the sausage pieces in half across, opening them up. Grill the sausages on the hot griddle until crispy on both sides, about 7 to 8 minutes total. Wipe some of the grease off the griddle and drop heat to low.

    Lightly butter 1 side of each slice of bread. Build butter-side-out sandwiches of grilled kielbasa, sauerkraut, and 2 slices of cheese; spread the top of each sandwich with red pepper relish before setting in place.Grill the sandwiches on the griddle until crispy. Cut and serve.

    1 tablespoon vegetable oil

    1 (16 ounce) package smoked kielbasa sausage, diced

    6 medium red potatoes, diced

    1 red bell pepper, sliced

    1 yellow bell pepper, sliced

    Heat the oil in a saucepan over medium heat. Place kielbasa and potatoes in the saucepan. Cover, and cook 25 minutes, stirring occasionally, until potatoes are tender.Mix red bell pepper and yellow bell pepper into the saucepan, and continue cooking 5 minutes, until peppers are just tender.

    *Philly-style Kielbasa with Fennel k***t and Peppers

    ---For the k***t:---

    1 head white cabbage, finely shredded

    1 cup cider vinegar

    3 cups water

    1 tablespoon salt

    1 tablespoon whole fennel seeds

    ---For the kielbasa:---

    2 quarts water

    2 (12-ounce) bottles lager (recommended: Yuengling)

    3 (1-pound) Polish-style sausage kielbasa, each cut into 4 pieces (recommended: Hillshire Farms)

    ---For the peppers:---

    1/4 cup vegetable oil

    1 red pepper, seeded, cored, and sliced lengthwise into 1/2-inch strips

    1 green pepper, seeded, cored, and sliced lengthwise into 1/2-inch strips

    ----k***t:---Combine all ingredients in a Dutch oven. Bring to a simmer, over medium-low heat, cover, and cook for 1 hour, stirring a couple times.

    *Kielbasa and Meatballs with Basil Tomatoes

    ----Sauce:-----

    2 tablespoons olive oil

    1 large red onion, diced

    2 cloves garlic, minced

    1 red bell pepper, stem and seeds removed and sliced

    1 green bell pepper, stem and seeds removed and sliced

    1 (29 to 32-ounce) can chopped plum tomatoes in puree

    1 bunch fresh basil, thoroughly rinsed, leaves stripped from stems and cut chiffonade, and stems bundled with kitchen twine

    ---Kielbasa:---

    1 tablespoon vegetable oil or olive oil

    1 pound smoked kielbasa

    ---Meatballs:----

    1 cup fresh bread crumbs

    1/4 cup milk

    1 white onion, diced

    2 eggs

    1 tablespoon finely diced fresh parsley leaves

    1 pound ground beef

    1 dozen Italian style rolls, sliced

    -----For the sauce:----Heat olive oil in a saucepan and saute onion and garlic until translucent, being careful not to burn. Stir in sliced peppers and gently cook until softened. Stir in tomatoes, fresh basil leaves bundled basil stems, season with salt and pepper and let cook gently to let flavors integrate.

    ----For the kielbasa:----Preheat the oven to 350 degrees F.

    While the sauce is cooking, heat the oil over medium heat in a large skillet. Cook kielbasa until they begin to brown being careful to keep heat at medium so they don't split. Transfer to a large baking dish with a slotted spoon, reserving the drippings in the skillet to sear the meatballs.

    ---For the meatballs:---While the kielbasa are cooking, mix breadcrumbs, milk, onions, eggs, and parsley in a mixing bowl. Add ground beef and mix thoroughly. Form into small meatballs and sear in the pan in which the kielbasa were cooked. Transfer with a slotted spoon to the baking dish with the kielbasa. Pour the sauce over the kielbasa and meatballs, and cover with a lid or foil, and finish in the oven for about 20 minutes.

    Serve as sandwiches with Italian rolls.

  5. my mom just cuts the kielbasa into bite size pieces, and fries them in a pan with some canned diced potatoes using olive oil. just season it with salt and pepper and its reallly good. :)
