I love samosas. In Singapore, we can find samosas from 2 different ethnic groups, Indians & Malay.

The differences:

Indians: Use a kind of dough, the packing of the samosa is very bulky, always vegetarian (curried potatoes & sold at some shops, there's peas & cubed carrots as well).

Malays: Use ready-made popiah (spring rolls) skin, nicely-folded triangular shape, filled with sometimes just like the Indians' version, & sometimes with minced beef as well.

I love samosas.  I have found that garam masala is a good seasoning to make samosas at home.  I use peas, potatoes, and onions and then wrap into egg roll wrappers or phillo dough.

I like Samosa made with potatoes and peas filling. Unfortunately, Samosa don't like me. I get a heart burn from eating Samosa.

I think its because of all those spices and deep frying. I bake my Samosa in the oven using pastry dough and Potatoes and chickpeas, reducing the amount of spices needed.
