I know you didn't ask, but fried rice dishes were started in America to satiate our love for fried foods. Me, I insist on steamed white rice, sometimes flavored with a little soy sauce or the juices from whatever entree I am having.

My favorite is chicken fried rice but if there are big chunks of chicken in there I don't eat them. I just like the flavor the chicken gives the rice.

I used to get fried rice from this place that had big old chunks of chicken in the rice. I would eat the rice and pull out the chicken chunks and give them to my little dog. LOL

My first choice is shrimp fried rice - but the shrimps must be fresh (not the frozen ones) + good quality char siu (roasted pork) + egg + Thai Jasmine long gain rice + green onions!

Chicken and salty fish fried rice is good too, the fragance smells wonderful and instead of green onions, we add crispy shredded lettuce in the fried rice.
