  1. I use it all -  the lime, basil, chili and sprouts.  I even throw the squeezed lime into the broth so the citrus oils in the skin permeates the broth.

Depending upon the Pho place, I also use hot sauce and hoisin sauce.  However, I've found one place where the broth is so good that the hoisin sauce and the hot sauce just ruins the broth.

  2. it is traditional to squeeze lime into it, adding the basil sprouts, and if you want the chili peppers. But it isn't traditional to put the chili sauce or plum sauce into it,

you put half of each on the sauce bowl on the side and dip your meats into it

  3. I use everything even the sprouts, only a few basil leaves and while the chili is hot the hot sauce is better, a bit of soya or vinegar, in Vietnam they use alot of lime or a green lemon, it is a amtter of choice, here in Toronto when I get it I go to places theat serve the real Vietnamese coriander, it has a sawtooth edge, the Thai basil is a good replacement.

  4. weird , i have never gotten lime with my pho!

    I love lime

    totally not fair!
