  1. Iberostar resorts are really nice and they have locations all over the world.  If your looking for something that is especially for couples you might want to look into Sandals resorts....they have locations throughout the Carribbean.

  2. We went to Couples - Swept Away in Negril Jamaica.

Very nice place, couples only, resort.

Spring the extra bucks for the Ocean Front room.

  3. Samba Vallarta in Puerto Vallarta, Mexico,  Whyndam in St. Thomas USVI.  Calinda or Riu in Cabo san Lucas Mexico..the list go on and on

  4. I've been to a handful of all-inclusive resorts in Mexico (via Apple Vacations and Funjet Vacations) that are nice.  Golden Crown Paradise in Puerto Vallarta is very nice, and no one under 18 is allowed in (so no screaming kids running around the pool).  Just went to Sunscape Puerto Aventuras in Riviera Maya in November, and that was a decent place.  Can't remember the name of the other place I stayed at in Cancun.  If you end up going through Apple, just look for resorts that have a five red-apple or better rating.  And for whatever resort you find, try looking at user reviews on tripadvisor.com -- but also take those with a grain of salt, because people on there can be whiners.

Also, if you go to an all-inclusive, it is nice to bring some small bills for tipping.  The waitstaff/porters/workers will give you a little extra attention for it.  Other than that, it's really nice to not have to worry about carrying money or going into sticker-shock when looking at a menu.
