Does Dum Aloo have to have milk or cream in it?

I am looking up recipes for Dum Aloo (Indian potato curry) and some have milk products (cream, milk, yogurt) and some don't. What makes the difference? How's the taste or texture different? What tastes better? Thank you.

  1. I persoanlly like it better without the creamy sauce. In Bengali cuisine we do not use milk products in Dum Aloo which gives it a more intense flavor. We also prefer to use small whole potatoes. However Kashmiri Dum Aloo recipe does require yogurt.

    Indian Aloo Dum or Potato puddle are really delicious. Neither milk nor creme goes with it. What you need is mustard oil, which you will find either in an Indian Or chineese store. This will well replace any other oil and will add to taste. Put the pan, add oil. When hot, put half a tea spoon mustard seed as well into the hot mustard oil. when they puff up, add sliced onion into it. when the onion turns reddish, add the crushed or uncrushed potatoes and fry it. In case of Aloo Dum, the uncrushed potatoes might need a little water. Feel free to write to me if you have further question about Indian recipies.

  4. You can make this recipe and omit the dairy if required.  Add a tbsp or so of lemon juice to mimic the tangy/sour taste of the yogurt.

    The addition of cream will make the dish smooth & creamy, if that is your preference.

  5. we normally put yogurt in it cause it has tangy taste,,, and if we add cream the real taste will not come ,,,,
