I'm almost cetain that Heatrow is going to want € ( Euros) only unless you use a credit card. I'm not too certain that they will convert like the other answer said,.. BUT I do know that if you shop at Harrods at Heathrow THEY will offer you to buy in dollars and IT IS CHEAPER at Harrods

The duty free shops will convert your money on the spot from most currencies.  For other shops you may have to use the currency offices to change your USD to real money.
