Does a double yolked egg count as 1 egg or 2 when using eggs in a recipe?

I was making zucchini bread and had a dozen that at least half were double yolked.

  1. They count as one egg as the total weight of the egg is about the same for the size, whether they have one or two yolks.


  2. If the eggs you are using are medium or large size, then I would count them as singles. If you specifically need the yolks, then count each one individually.

    However, since double yolks occur most often in Jumbo eggs, I'm assuming this is the size you are using. If this is the case, I would count each egg as 1 1/2. Or you could weigh the eggs and determine the correct amount this way. See the link below, about half-way down the page, for an easy equivalent chart.  (Lots of other useful information here also)
