Does a recipe for no carb, sugar free muffins exist? ?

If so, I would like to have it! I want to make apple cinnamon muffins- I was going to use almond meal and whole wheat self-raising flour, and equal. Anyone know any recipes along these lines?

  2. I believe all types of flour contain carbs, including whole wheat self-raising flour.

    There are recipes for flourless cakes though but not suitable for muffins, I think.

    If you don't mind a recipe that's really low in carbs, you can try this. I think you should be able to substitute the nutmeg with cinnamon.

    Apple Raisin Muffin

    Servings: 12= 1 muffin each Preperation Time: 15 minutes

    2 cups multi-grain glakes

    1 1/4 cups skim milk

    2 1/2 tsp baking powder (low sodium, if you can find it)

    1/2tsp nutmeg

    1/2 cup chopped apple

    1/2 cup raisins

    2 egg whites ( already beaten and ready to pour)

    3 tbsp vegetable oil ( sometimes i use olive oil instead)

    1/4 cup sugar substitute

    2tsp vanilla extract

    1. Mix the first two ingredients in a bowl. Set it aside and let it stand for 5-8 minutes.

    2. Pour the flour and baking powder, and nutmeg into your bowl of grain flakes and milk. Stir it really well.

    3. In another bowl, stir in egg whites, sugar subsitute, and vanilla untel well blended. This is done best with a wire wisk.

    4. Combine both of your mixtures togeher and stir until moistened.

    5. Stir in apple chunks an rasins

    6. Heat oven to 400 degrees.

    7. Put baking cups into a muffin tin. Fill the cups about 2/3 full.

    8. Bake for 15 to 20 minutes

    Nutritional Facts/ Serving: 146 Calories, 37 Calories from Fat, 4g Fat, 1g Saturated Fat, 0mg Cholesterol, 29mg Sodium, 26g Carbohydrate, 2g Dietary Fiber, 12g Sugar, 4g Protein

  3. SUGAR FREE MUFFINS  

    1/2 c. vegetable shortening

    2 env. Sweet-N-Low

    2 eggs

    1 1/2 c. flour

    1 1/2 tsp. baking powder

    1 c. raisins

    Orange juice

    (In small saucepan, place raisins in just enough orange juice to cover. Simmer over low flame until raisins are softened. Remove from heat and cool).

    In medium sized bowl, cream shortening with Sweet-N-Low. Beat in eggs singly. Mix flour with baking powder and add to creamed batter, mixing until smooth.

    Add raisin juice mixture and combine until smooth and creamy. Fill cupcake liners in pan evenly to fill 12 cupcakes. Bake at 350 degrees for 30-35 minutes (or until light golden).




  4. According to the link below, there ARE carbs in the whole wheat flour (self-rising or not).  I don't know of any carb free flour.  Good luck in your search.

  6. you can google or yahoo it but they are lying if they say such muffins exist because EVERYTHING has carbs.
