Back "in-the-day" I had seven children in school at the same time - you can imagine that paying for school lunch on a daily basis for this crew was a tad expensive - so everyone carried their lunch to school.  I made school sandwiches only once a week (because of the time it took and I also worked) and froze them.  Use cold-cuts - no lettuce or tomato (they don't freeze well and make the bread soggy) If you use mustard that will work okay - but mayo will also create a soggy sandwich after it thaws out.  Peanut butter worked well in the freezer - but jelly was a soaker as well.  Anything like tuna salad egg salad chicken salad etc does not freeze well.  I would invest in the small packets of mayo to drop into the lunch bag for the kids that liked mayo - and that way they could put it on their sandwich themselves at lunchtime.  So yeah . .. it does work - but you do have limitations.

I use regular bread, kaiser or mini sub rolls.  I mix my mayo with a little mustard until it is light yolk color.....actually tastes similar to butter....I put cold cuts or left over meat from dinners on both sides of the bread....then I spread my mayo mix on the meat.....put one piece of cheese and close.....

    The mayo mix isn't touching the bread so it won't sog out the bread.....also if you pat dry your meat.....so it doesn't have moisture to sog out your bread too.

    If you want peanut butter and jelly....spread peanut butter on lightly toasted bread on both sides..........put the jelly lightly spread on one or both sides, over the peanut butter.....
