I've got a green one. Will it change colour in time or is it ready to eat anytime?

  1. Spaghetti squash have to be yellow, other kind of squash - can be green

  2. If it's already been picked and is green, then it'll probably go bad before it changes color.  Some squash, like zucchini, is always green no matter how big it gets.  Others will turn yellow or orange, but they're still OK to eat when they're green.

The same (will eventually ripen but OK to eat while green) should hold true for winter squash, just in case you're talking about those instead...

  3. Squash, such as the crookneck variety, are normally straw-colored or pale yellow when ripe. You can eat them green, but it will have some effect on the taste.

  4. zucchini is green when ready.  Not sure what type of squash you have.

  5. no Ive had different types of squash before and they were all fine.
