Question:

Does a wine bottle thats been open for a long while but is shut with the cork go bad? I see something in side?

like little specs of things i don't know what it is or if its part of the wine the wine is GOLDEN GATE VINTNERS Falifornia Cabernet Sauvignon

  1. It is part of the cork.  The wine is probably not that good either.  However, you will never know until you taste it! Pop it open!

    When wine is fermenting and stored, the little space has minimal oxygen to allow oxygenation of wine.  In addition, the cork over time will contribute to part of development the wine, and the wet portion of the cork will be different from dry portion of the cork.  

    Once you open the wine, you will introduce oxygen into the bottle.  In addition, the more wine you drink, the more space you will have left for oxygen to get in and interact with your wine, and the surface area of wine and oxygen contact will increase as well.  Further, once you open the wine, the cork is removed, and plugging the cork back will change the wine further, as well as the possible flakes of wine cork that might fall into wine itself as you open it.

    The best way to store wine is to use the wine keeper gas - heavy gas that will layer on top the wine to keep the wine from contacting the oxygen in the air.  After you put a layer, put the wine upright in the refrigerator upright.  That way may keep wine for 1-2 weeks, but it is doubtful that you can keep wine for longer than that.

  3. All wines are different. It also depends on what a "long while" is. Some wines can get better with oxygen some others do not like it much. Since it's California Cab., in my experience, these do fairly well  after being open for a few days. I think it will be fine.

    If it has been more then a week, I would taste it. If it taste sour and has notes of vinegar, you can use it for cooking...



    I would not be concerned about any floating specs. Wines are not always filtered and often times have sediment.  Just let the wine seat upright for a couple of hours before drinking and poor into a glass gently you should be fine.

    Make sure that the wine is not too warm. Drink at cool room temp. or put in the fridge for a few minutes to cool of, if your room is too hot.

  4. The wine may be on the way to vinegar the specks may be mother. Open and taste no know pathogen can survive in beer or wine.

  5. If it's a Falifornia wine, I wouldn't drink it if the cork was still in.

  7. Wine Can grow fungus in it from the high amounts of sugar in it.  If i were you id get a big punch bowl, pour all the wine into it and see if its just cork or actual fungus. Good luck, and make sure you take some asprin before you go to bed! Wine always gives me some NASTY hangovers!

  8. Yes it can, but this sounds like its 'corked' in which case, not worth drinking
