Does absinthe keep?

If I made a giant pitcher of absinthe would it eventually go bad? Does absinthe keep after being prepared?

  1. It would depend on the amount of alcohol, did you use a strong alcohol base and add things to it or brew it yourself?

Undiluted absinthe keeps indefinitely.  It's even argued that, unlike any other spirits, it continues to age in the bottle.  Bottles of authentic, pre-ban (made before 1912-14) have been periodically found in private caches.  They all have proven to be of a quality that surpasses the younger, more recently made absinthes.

    When one prepares absinthe for drinking, it should be done one glass at a time so it stays cold and fresh.  The reason you don't see absinthe pre-prepared is that once you add water and the oils are released from their suspension in the alcohol (this is when it turns cloudy or "louches") it is no longer stable and must be drunk.  Over time, when it warms and is allowed to sit, it will eventually separate, the essences will degrade, and it will no longer be good to drink.

    Making a big pitcher wouldn't be a good idea.  Partly because it eliminates the preparation part of the drink and that's part of the appeal.  The other is that it's not going to keep well.  Kind of like the way a carbonated drink just isn't as good after it's gotten warm and gone flat.  It won't hurt you to drink it, but it just won't taste good any more.
