  1. Here ya go...

Usually a dish comes with a specific side item or you can choose between a few. Memorize the items. Then remember the ones that are most popular and most ordered. When a guest orders an item that comes with the sides you have memorized you should let them know "(the dish they ordered) comes with their choice of side dish". They should not expect you to say all side items, every time you take an order. However if you do have to, say the most popular first so that you can hopefully catch a guest's ear and they will stop you can get those. You want to save time. Another way to save time is to make sure that when you list all of the sides, you say it loud enough so that all of the guests at your table hear you. That way you don't feel like you have to repeat yourself.

  2. see what there dish is and then say the side dish they will get with the meal

  3. Try to memorize them the best that you can. It's better for the customer to know that they have more choices. At the diner I serve at, our sides of vegetables that come with entrees vary by day--these ones I write down on a piece of paper and put it it my check book. When it comes to when they want to order, I read the list to the customer aloud.  But, in addition, we have other sides that we have everyday listed on the hard menu--so I made sure I memorized them so that I can be able to say 'but besides these sides...we have our everyday sides such as baked potatoes, french fries...apple sauce...etc.'

  4. To be honest... 10 items is NOT a lot to remember.

Do what actors do to remember their lines:

Write down the item as you say it. Say it at the same speed you write it.

Keep doing this over & over again until you no longer need to look at the list.

This is what I do to memorize specials for the day at the restaurant I work at.
