  1. Man it has been a long time since I made either of them. So here goes. one can of tomatoes, one can of tomato paste, two cans of tomato sauce, add together simmer all day. You also want to saute these items together. one onion, one green pepper, one clove of garlic. Make it a fat clove. If they are small than I suggest using three cloves.  Saute all together add to the tomatoe sauce and let simmer all day. Stiring occasionly. Than after about several hours of sauteing if desired add a can of mushrooms and one cup of chopped olives. I prefer to use the angel speghetti noodles because it only takes several minutes to make. After you been letting it simmer all day you are going to be hungry so I suggest using angel speghitti. I hope it turns out flavorable for you. If desired you can use flavored tomatoes.

  6. PUMPKIN MUFFINS

    3 1/3 c. flour

    2 tsp. baking soda

    3 c. sugar

    1 1/2 tsp. salt

    1 tsp. cinnamon

    1 tsp. nutmeg

    1/4 tsp. ground ginger

    Mix dry ingredients and add:

    1 c. oil

    4 eggs

    2/3 c. water

    2 c. pumpkin

    Preheat oven to 350F degrees.

Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess.

Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean.

Frost with Orange Icing or Cream Cheese Frosting.

  7. TEXAS CHILI

2 lb very lean ground beef or diced chuck steak

    7 T chili powder

    1 T ground cumin

    2 t paprika

    1 onion, finely chopped

    2 t salt

    1 1/2 t cayenne pepper

    2 T masa

    1 8oz. can tomato sauce

1 15oz. can red beans (optional)

1 15oz. can tomatoes(whole or diced, drained) optional

Brown ground beef and drain. Stir in tomato sauce and 2 cans of water. Mix all ingredients except cayenne pepper and masa. Simmer 30 min. Add as much pepper as desired. Mix masa and 1/4 c warm water. Add to chili and stir well. Add Tomatoes or beans if desired. Simmer 20 min.

Of course, feel free to add more or less pepper. I usually serve it over rice or with tortilla chips, sometimes both. Enjoy ;)

    SPAGHETTI SAUCE

4 tbsp. oil (from browned meat or olive oil)

2 lb. sausage or ground pork or beef or chicken

5-7 cloves garlic (more if you like it)

    1 onion

    1 1/2 tsp. oregano

    1/4 tsp. marjoram

    1/2 tsp. basil

    1/4 tsp. thyme

    1/4 tsp. pepper

    Dash and sprinkle salt

    Many mushrooms

1/2 c. grated carrots (if you like)

    1-2 bell peppers

    2 tbsp. Parmesan cheese, grated

72 oz. tomato sauce (many sm. cans or 2 lg. cans)

    1 tsp. honey

    Fresh parsley

Brown meat in skillet by tearing meat into small pieces in hot skillet, turning meat to cook all sides. Some oil will separate from meat during frying.

In large pot or skillet used to cook sauce in, pour 4 tablespoons oil from meat. Add spice, onion and minced garlic to the heated oil, then stir in the remaining spices. Stir until onions get soft and garlic is a light golden brown (do not allow garlic to get too dark or it will be burned and bitter).

Clean and chop many fresh mushrooms and add to skillet. Add carrots and chopped bell peppers, occasionally stirring as to saute evenly.

Sprinkle with Parmesan cheese. Add tomato sauce cans (cooked tomatoes) to skillet.

    Stir in drained browned meat.

Cover pot and let it simmer for an hour, not boil. Make spaghetti pasta 15 minutes before serving preparing according to directions on package.
