Does any one have a good vegan pasta meals without out dairy products?

My sister has allergies so she went vegan. I want to make a grilled pepper and squash garlic pasta dish but she can't have butter or cream, she is allergic to dairy products. Please help.

  1. Instead of making a creamy butter sauce, use some olive oil and garlic.  It's much healthier in general.

    So, just grill your veggies and set them aside.

    Pour some olive oil in a wide saute pan (big enough to hold the pasta later), add some crushed or minced garlic (not dried).  Slowly saute the garlic over medium heat until its fragrant and bubbly.  Do not let it brown or it will be bitter.  Remove the pan from the heat to prevent browning. (optional - throw in a pinch of crushed red pepper flakes)

    Drain your pasta, toss it in the olive oil and garlic pan.  Add some chopped italian parsley and toss it until combined.  You can either add in your chopped grilled veggies or just put them on top.

    Sprinkle with more chopped italian parsley


  2. Here is a vegan Cheese:

    Capsicum Cheese Spread

    1c cashews

    1 large red capsicum

    1/2 t salt

    1/2 t onion powder

    1c water

    2t lemon juice

    1/2 t garlic powder

    1/2 t herbs

    You Can put whatever herbs you want in.

    Blend Cashews, salt and water till smooth. Stir constantly in pot till thick. Then put it back in blender, and add the rest of the ingredients.

    You can also get soyaroni ( that is a type of pasta)

  3. On the website below, there are several vegan pasta dishes to choose from.  All are delicious and easy to fix.  Here is a freebie.

    Meatless Bolognese

         1 lb.         Tofu, Crumbled or Beef Substitute

         1/2           Onion, chopped

         1/2           Green Bell Pepper, chopped

         1 1/2 tbs. Olive Oil

         1 Lg can  Organic tomato sauce

    1. Over medium heat, cook pepper and onion in oil in a large pan with the crumbled tofu or meat substitute until onion is light brown.

    2.  Add sauce to pan mixture.  Turn up to boil, then simmer for about 15 min.

    3.  Cook pasta ad dente and serve with the sauce mixture.

    4.  Garnish with chopped, fresh parsley.

Earth Balance makes a great spread, and "buttery sticks" that are both vegan.  Your natural foods store or Whole Foods carries their stuff.  As for cream, you can whir silken tofu (the shelf-stable stuff in the aseptic box) in a blender to liquefy it or get soy cream from vegan online retailers.

    Or you can invent your own recipe that uses the grilled vegetables in an olive oil and garlic sauce or marinara sauce.  Amy's Kitchen has some great pasta sauces, and many are vegan (just check the labels; it will say "vegan" at the beginning of the ingredients list).  Newman's Own and Whole Foods also make vegan marinara sauces.

  6. 1.  We make vegetarian chili mac...

    You take 1 large can of tomatoes, 1 lb of vegetarian meatless ground, 1 can of chili magic chili starter, and 1 lb of your favorite type of pasta.

    Boil the pasta until it's almost aldente.  Drain the water and add the rest of the ingredients.  Stir and keep it on the stove until its heated through.

    Trust me.  It's really delicious.  You can spice it up a little or even make the chili from scratch.  We just happen to really like it the way it is.  It only takes about 20 minutes to make it and clean up is a breeze because you only need one pot!

    2.  We also make vegan mac and cheese...

    Boil 1 lb of your favorite pasta until it's almost aldente.  In the meantime take 1 lb of vegan soy cheese and cut it into really small cubes.  Add the cheese and about 1/4 cup of soymilk to sauce pan.  Heat the cheese until it's melted.  Then drain pasta and poor cheese over pasta.  Stir pasta until the cheese has coated all of the past and take it off the heat.  This pasta is excelent with your favorite stewed tomatoes.

    3.  Last but not least we make regular meat free spaghetti.

    Once again, make 1 lb of your favorite pasta.  After you have drained it, add your favorite veg spaghetti sauce.  You can make the sauce by scratch, use canned, or use canned and simmer it with fresh vegetables like peppers, mushrooms, and onions.

    You can make your own garlic bread with crusty Italian bread sliced and spread with vegan garden or any other vegan spread.  Then sprinkle garlic powder on it put it in the over until it's golden brown.

    You can also buy vegan meatballs and serve them with the pasta.
