Does any one know any Mexican recipes?

i don't need a main dish, something easy, i need to bring it in for a class

  1. Spanish Yellow Rice: Ingredients

    1 cup uncooked rice

    2 tablespoons olive oil or butter

    1/2 teaspoon salt (to taste)

    1/8 teaspoon powdered saffron

    3 cups vegetable broth or chicken broth

    Directions

    1Cook rice in oil or butter, stirring, until opaque.

    2Add salt, saffron and bouillon.

    3Bring to a boil, immediately turn heat to low, cover, and simmer 16-20 minutes, until rice is tender. (If after 16-18 minutes you find more liquid is needed, add water as necessary, up to 1 cup maximum).


  2. WHAT ABOUT GUACAMOLE???

    YOU NEED AVOCADO, CHOPPED ONION, TOMATOE, AND  CORIANDER, A BIT OF SALT, AND THE JUICE  OF A  LEMON AND MILK, YOU CAN PUT THE AVOCADO WITHOUT THE SEED AND BLACK THING OUTSIDE, IN A BLENDER, PUT A LITTLE MILK AND SALT, AND THEN MIX THE OTHER INGREDIENTS, EAT WITH CHIPS, IT TASTES REALLY GOOD.

    NOTE: YOU HAVE TO MAKE IT BEFORE EATING, BECAUSE THE AVOCADO BECOMES BLACK IF YOU DON´T EAT IT IN A FEW TIME.

  3. Tortillas

    2 cups flour

    1 tsp salt

    1 tbsp baking powder

    1/4 cup shortening

    3/4 cup warm water

    mix dry ingredients, cut in shortening.  Add water.  Mix until it gets doughy, then kneed until well mixed (about 5 minutes).  Cover dough and let sit for about 10 minutes.  Shape dough into balls (depends on how big you want the tortillas) Roll out flatvand cook on a hot skillet or pan until each side is golden brown.

  4. enchilada casserole

    15-20 corn tortillas

    cream of mushroom soup

    1lb browned ground meat

    1lb velveeta cheese block

    1 med. can enchilada sauce

    brown meat; melt velveeta cheese; add browned meat to cheese and add cream of mushroom soup, and enchilada sauce. add onions if desired; lay corn tortillas along bottom of pan then layer the cheese/meat sauce on. then put corn tortillas over the cheese sauce and add more cheese sauce layer with corn tortillas again and again until cheese/meat sauce is gone. finish with cheese/meat sauce on top and ovenate on 325 for 20-30 minutes
