Does any one know how to prepare Chinese snap peas for a stir fry?

I am going to make a stir fry with chicken and some vegetables and I wanted to include peas that are still in the pod Im not sure of the name but I wanted to know if im supposed to boil them or soak them or do anything to prepare them before tossing them into my stir-fry, Please Help =)

  1. Ingredients (Serves 2):

    - about 4 cups, snap peas

    - 1/4 lb pork or 1 whole sliced diagonal chinese sausage

    - salt and pepper

    - 1 tsp minced garlic

    - 1 tbsp oyster sauce

    - 2 tbsp of oil

    Preparation and cooking method:

    1. Pick through the snap peas to remove any that aren’t perfect. While doing that, remove and discard the stem end and the strings from both seams of each pod.

    2. Cut pork into thin strips, or chinese sausages into any shape you want. Then, season with salt and pepper.

    3. Heat up a wok with 2 tbsp vegetable oil. Medium heat. When oil is hot enough, add garlic and stir fry until fragrant, but not burnt.

    4. Add pork or chinese sausage and stir fry until color changes for the pork, or stir-fry the sausage for one minute or 2. Add snap peas and stir fry for a few seconds then add oyster sauce and mix well. Add some water (about 1-2 tbsp) if you find that the dish is too dry. Reduce heat and cover the wok to allow the snap peas to cook for about 4 minutes.

    5. Do a taste test. If the sugar snap peas still taste raw-ish, cover wok lid and simmer for another minute or so. Add a pinch of salt if not salty enough.


  2. Assuming you're using all fresh vegetables, all you need to do is snap off the ends of the pea, and remove any stringy parts that come off with the ends.  If they're dirty you should wash them as well.  Then you can just throw them in the stir fry with the rest of the vegetables.  If everything else you're using is precooked/canned then you might want to steam the peas first.

  3. Just rinse them well before you put them in, cut off the ends if there's pieces of vine or anything. Then just toss them in until they're heated through, you can eat them raw if you want to.
