Banana Walnut Bread Pudding

from The French Hen in Tulsa, Oklahoma

6 cups cream

3 eggs

4 eggs yolks

1 cup + 4 T. sugar

2 t. Vanilla

1 t. salt    

2 loafs Banana Bread    

Mix cream, eggs, cups of sugar, vanilla.  Fill 1/2 hotel pan with cubed bread and pour mixture over.  Sprinkle with remaining sugar. Bake in water bath at 325 degrees for 1 hour. Served with vanilla bean ice cream and caramel branch sauce.
