  1. MOULES À LA ROCHELAISE

    Mussels à la Rochelaise

    Ingredients for 4 : 1,5 kilograms mussels; 2 cloves of garlic; parsley; 1 lemon (for garnishing); 150 grams butter; virgin olive oil; salt.

    Peel the garlic, wash a large bunch of parsley, and chop together finely (use the food processor if you like) and blend in a softened butter and two pinches of salt.

    Scrape the mussels, tear off the "threads" and wash them under cold running water.

    Put the mussels into a pan with a little virgin olive oil and cook quickly over a high flame until they open. Discard any that remain closed.

    Put some of the garlic and parsley flavoured butter onto the half shells containing the mussels.

    Arrange in an owen dish, put them in the oven and brown under the grill for 2 to 3 minutes.

    Rosemary Grilled Red Mullet

    4 10 ounce prepared red mullet

    2 ounces butter

    2 teaspoons fresh rosemary or 1 teaspoon of dried rosemary

    1 tablespoon polyunsaturated oil

    1 lemon, grated rind and juice

    Melt the butter in a saucepan, add the oil, lemon rind, juice and rosemary. Remove pan from heat. Preheat the grill to a high setting. Thoroughly coat mullet in sauce and stand for a few minutes.

    Grill one side of the fish for a 3 to 4 minutes , turn, and repeat on the other side. Serve hot with any remaining sauce and a crisp, green salad.

    5-7 rue Saint-Jean or 8 place de la Chaîne (00 33 5 46 41 28 24). It's hard to spend more than £25 a head with wine here, even if you dine on oysters, or sea bass with beurre blanc, amande clams or turbot with artichokes.

    A COTE DE CHEZ FRED

    30-32 rue St-Nicholas (00 33 5 46 41 65 76). This scruffy and unassuming adjunct to the town's best-known fish shop packs in two sittings a night. Try palourde clams poached in cream, followed by roast rascasse and grilled red mullet. Booking is essential.

    CAFE DE LA PAIX

    Place de Verdun (00 33 5 46 41 39 79). This opulent belle époque café opened in 1895. Today, soigné Rochelais lunch on its inexpensive salads, among them an excellent assiette de crudités and salade de gesiers.

    RICHARD COUTANCEAU

    Plage de la Concurrence (00 33 5 46 41 48 19; www.relaischateaux.com/coutanceau). La Rochelle's only two-Michelin-star restaurant offers specialities such as tartare of prawns in oyster jelly and curried turbot with coriander. This is the town's finest restaurant, with a high standard of service and a superb location on the sea-front.

    LA GRAND' RIVE

    24 quai Duperre (00 33 5 46 41 44 53). Among the many cafés that line the Vieux Port, this is the ideal place for an apéro of the local Pineau de Charente, a sweet fortified wine, or a cup of coffee, the best in town.

    BISTROT DES PECHEURS

    2 Rue de la Chaîne (00 33 5 46 41 25 16). An ordinary café/creperie popular for its petit déjeuner des pêcheurs, six oysters and a glass of wine.

    ERNEST LE GLACIER

    15-16 rue du Port. The most splendid ice-cream parlour. Try the fig or cinnamon or the caramel-and-fleur-de-sel, its salty sweetness is unexpectedly delicious.

  5. Raw oysters.  Eat them with a bottle of Muscadet.  Fabulous.
