Does anybody have a plain cookie/biscuit recipe thats does NOT need eggs?

  1. BUTTER SHORTBREAD

    Ingredients:

    9oz plain (all purpose) flour

    3oz caster sugar

    6oz unsalted butter (NOT MARGARINE)

    Preparation:

    Mix flour and sugar. Rub in butter and knead with warm hands until thoroughly combined and smooth (no cracks) – overwork rather than underwork.

    Divide into two equal parts and press into the bottom of 2 x 7” lightly buttered cake tins (it should be quite thin). Flute edges with your knuckle. Prick all over with a fork and mark each one into six sections. Sprinkle with granulated sugar.

    Bake at 160C for 30 mins. When done it should just start to brown and look a little risen and spongy. Leave to cool just a little then retrace the sections right through the shortbread (do this before it gets cold as the cake becomes very brittle and will break when you try to cut it). Turn out the sections when cold.


  2. chocolate chip mcookies

    100g (4oz) marg

    75g (3oz) soft light brown sugar

    2x15ml spoon syrup

    175g(6oz) self raising flour

    100g (4oz) choclate chips

    2x5ml (tsp) milk

  3. Gram's tea biscuits

    2 1/4 cups all-purpose flour

    1/4 teaspoon salt

    1 cup butter, softened

    3/4 cup confectioners' sugar

    1 teaspoon pure vanilla

    3/4 cup hazelnuts, finely chopped

    1/3 cup powedered sugar

    Pre-heat oven to 325 degrees F (165 degrees C).

    Combine flour and salt and set aside.

    In a large bowl, cream together butter and confectioners' sugar blending well. Beat in vanilla. Gradually blend in flour/salt mixture. Fold in chopped hazelnuts.

    Break off dough in walnut sized pieces and roll into balls. On ungreased baking sheets place balls 1-1/2 inches apart. Flatten slightly. Bake for 12-15 minutes until lightly colored. Toss hot cookies in paper sack with powdered sugar. Cool on wire racks.


  4. Try looking up vegan recipes.  There are lots of subs for eggs in baking (e.g. applesauce, banana, oil, vinegar, flax, etc).

  5. You can leave out the eggs in any recipe. It may make the final product not quite so soft and rich, but it will work just the same.

    Think in terms of the pioneer women who settled the west. The foxes got all their chickens after they left the Mississippi River area. They had no chickens for eggs for years. and yet their recipes have survived down the ages.

  6. 1 c. brown sugar, packed

    1 c. pumpkin

    1/2 c. oil

    1 tsp. vanilla

    2 c. sifted flour

    1 tsp. soda

    1 tsp. baking powder

    1/2 tsp. each salt, cinnamon & nutmeg

    1/4 tsp. ground ginger

    1 c. raisins

    1/2 c. chopped nuts

    In mixing bowl beat together sugar, pumpkin, oil and vanilla. Sift together dry ingredients; add and stir until smooth. Blend in raisins and nuts. Drop by teaspoon on greased baking sheet. Bake at 350 degrees for 12 to 15 minutes. Makes 3 to 4 dozen. NO EGGS needed in these moist, soft cookies.
