  1. Aromatic Basmati Rice

    Ingredients:

    1 1/2 cups basmati rice

    2" piece of cinnamon

    2 whole cloves

    2 green cardamom pods, slightly crushed

    Preparation:

    In a bowl or shallow dish, wash the rice with cold water until it runs clear. Cover with water and soak for 30 minutes.

    Using a sieve, drain the rice thoroughly, and put into a thick-sided pot with 2 cups cold water. Add the spices, stir the rice mixture and bring to a boil over high heat. Immediately reduce heat to very low, cover and simmer for 25 minutes.

    Remove from heat and let stand for 5 minutes. Gently fluff with a fork, removing the whole spices, and serve.

    Curried Basmati Rice Recipe

    Ingredients

    1 nonstick cooking spray

    3/4 cup chopped onion

    2 teaspoon curry powder

    1 small garlic clove; minced

    1 1/2 cup nonfat chicken broth; divided

    1 cup apple juice

    1 1/4 cup uncooked basmati rice

    1/2 cup chopped pitted dates

    1/3 cup chopped dry-roasted cashews

    1 red or green apple wedges; optional

    *NOTE: Original recipe used low sodium chicken broth NOT low fat

    Coat a medium saucepan with cooking spray; place over medium-high heat until hot. Add onion, curry, and garlic; saute 1 minute. Add 1/4 cup broth; saute 3 minutes or until onion is tender. Add remaining 1 1/4 cups broth and apple juice; bring to a boil. Add rice; cover, reduce heat; and simmer 20 minutes or until liquid is absorbed. Remove from heat; stir in dates and cashews. Garnish with apple wedges, if desired.

    Potato and Basmati Rice Pilaf

    1 onion, finely chopped

    1 russet potato, peeled an ddiced

    1/2 tsp. ground cumin

    1 cup basmati rice

    2 cups vegetable broth

    1/2 cup water

    1/4 cup currants

    1/4 cup toasted chopped walnuts

    1 Tbsp. butter

    Preparation:

    Heat the oil in a heavy skillet and add onion. Cook and stir for a few minutes, then add diced potato. Cook and stir until potatoes are golden, 6-8 minutes. Then stir in cumin and basmati rice; cook and stir for 1-2 minutes until fragrant. Add vegetable broth and water, bring to a boil, then reduce heat to low, cover, and simmer for 12-14 minutes until rice is tender. Add currants, walnuts, and butter and stir gently.

    Saffron Rice Pilaf Fusion Recipe

    This recipe is based on typical India Rice Pilaf recipes. However, we have made it easier and we will bake this dish.

    Ingredients

    1. Basmati Rice: 1 Cup

    2. Fresh or thawed frozen peas: 1 Cup

    3. Chicken Broth: 2½ Cups

    4. Vegetable oil: ¼ Cup

    5. Salt: ½ teaspoon

    6. Cayenne Pepper Powder: ¼ teaspoon

    7. Cumin Powder: 1 teaspoon

    8. Cinnamon powder: ½ teaspoon

    9. Clove powder: ½ teaspoon

    10. Nutmeg powder: 1/8 teaspoon

    11. Bay leaf: 1

    12. Saffron: 6 Strands

    Method

    Step 1: Wash rice in cold water.

    Step 2: Add all ingredients except peas in a large pot. Bring it to a boil. Boil for 10 minutes.

    Step 3: Stir in thawed peas. Bring to a boil.

    Step 4: Preheat oven to 370º F. Transfer all the ingredients from the pot to a baking pan. Cover the baking pan with Aluminum file.

    Step 5: Bake for 10 minutes. The rice should be done. Turn off the oven. Let it rest for 10 minutes to absorb all the fluids.

    INGREDIENTS (Nutrition)

    1 1/2 cups basmati rice

    2 tablespoons vegetable oil

    1 (2 inch) piece cinnamon stick

    2 pods green cardamom

    2 whole cloves

    1 tablespoon cumin seed

    1 teaspoon salt, or to taste

    2 1/2 cups water

    1 small onion, thinly sliced

    DIRECTIONS

    Place rice into a bowl with enough water to cover. Set aside to soak for 20 minutes.

    Heat the oil in a large pot or saucepan over medium heat. Add the cinnamon stick, cardamom pods, cloves, and cumin seed. Cook and stir for about a minute, then add the onion to the pot. Saute the onion until a rich golden brown, about 10 minutes. Drain the water from the rice, and stir into the pot. Cook and stir the rice for a few minutes, until lightly toasted. Add salt and water to the pot, and bring to a boil. Cover, and reduce heat to low. Simmer for about 15 minutes, or until all of the water has been absorbed. Let stand for 5 minutes, then fluff with a fork before serving.
