If you're talking about clubs that are really exlusive and only let in the super-cool people, Hennessy would be good for you.  It's located outside the city center in La Collina (where the rich and famous have their villas).  You've got to be super-s**y to get in and it's best to reserve a table in advance.  The music is usually quite good (mostly house music) and you'll definitely want to dress to impress.

If you don't have a car or don't want to pay for a taxi, you'd probably want to look at some of the clubs along the Murazzi and in Parco Valentino.  Cacao is a great one that is only open in the summer months, as it's outdoors.  You'll find it very close to the castle in Parco Valentino.  There's another club in the park called Life.  It's new and quite hip at the moment and very difficult to get in, but there are a lot of cheesy people there.  

I personally really liked Teatro.  The men there are really well-dressed, but the dress code for girls is more flexible.  The club is clean and well-ventilated.  Music varies from night to night.  You'll find it at Via Santa Teresa 10, near Piazza San Carlo.

If you want to get in a club in Torino you'd better be a girl or with lots of girls.  Big groups of men are almost never let in, especially when they're not Italian.
