  1. This is fun and easy and you will love it- mix one box of any flavor cake mix with one can of diet soda.  (complimentary flavors work best, like a dark chocolate cake mix with diet black cherry soda, or a yellow cake mix with a diet 7-Up).  Whisk them together to get the lumps out.  If you're making cupcakes, cook them for about 13 or 14 minutes at 375.  For a cake, use an 8x8 pan and cook it for about 20 minutes, just until it starts pulling away from the sides of the pan.  This is a secret Weight Watchers recipe and they come out so moist, you don't even need icing.  


  2. LOW FAT AND EGGLESS CHOCOLATE CAKE

    3 c. flour

    2 c. sugar

    1 tsp. salt

    2 tsp. baking soda

    3/4 c. oil

    1/3 c. cocoa

    1 tsp. vanilla

    2 tsp. vinegar

    2 c. water

    Mix all ingredients together well. Dump into a lightly greased 9 x 13 pan. Bake in 350 degree oven for 35 minutes. The recipe calls for dumping ingredients into a 9 x 13 pan and mixing well with a fork. I like it better mixing well in a bowl then dumping into the pan.

  4. There is your ordinary fat-less sponge and then there's this one-this is a slimmers one and quick and tastes really good too-

    100g All Bran cereal

    250ml boiling water

    2 eggs

    6 heaped teaspoons drinking chocolate

    1/2 cup sweetener( canderel)

    Method

    1)pour the boiling water on to the All Bran in a large bowl and mix well

    2)Add the eggs, drinking chocolate and sweetener and beat the mixture until all the ingredients are thoroughly combined

    3) Put the mixture into a 6 1/2 inch round plastic tub or other suitable microwaveable  dish, smooth the top with a spoon or knife and microwave on high for 6 minutes.

    4) turn out onto a plate and enjoy

Get a chocolate cake mix from the grocery store and 1 can of no sugar added pear halves.  Open the can of pear halves and add 1 tsp of cinnamon.  Pour the juice from the pears into the bowl with the cake mix.  Using a fork, mash up the pears and add them as well.  Add as many eggs as the cake mix calls for to the mix.  Do not add the oil or the water.  Mix well and bake as directed.  This cake will turn out moist, delicious and very low fat.  

    You can also bake a cake from a mix using a can of pumpkin instead of the eggs and the oil, but adding the water.  Then you don't have the cholesterol from the eggs in the cake, either.

  6. How about a virtually fat free fat cake?? It's real easy.

    Buy a chocolate cake mix from the store. Now, ignore the directions on the back of the box. No joke....And follow these.

    Pour cake mix into mixing bowl. Add 1 1/4 cups of water. Then add 1/3 to 1/2 cups of applesauce or even a fat free vanilla yogurt. Add only the 3 egg whites. Do not use the whole egg. Mix all this together and bake as directed.

    The reason for the changes: omit the oil you are omitting the fat. Omit the egg yolk and you are omitting the cholesterol issue. I do this all the time and my husband loves it.  

  7. Take any existing recipe and reduce the amount of any butter, margarine, cream, oil etc. in it.
