  1. coming up - please wait....

Cake: 125g unsalted butter, 175g caster sugar, 2 L eggs, zest of 1 lemon.175g SR flour, (and the inevitable!) pinch of salt, 4 tablespoons milk, 23x13x7cm loaf tin, buttered and lined.

Syrup: Juice of 1 1/2 lemons, 100g icing sugar.

Oven to Mk4. Cream butter and sugar, add eggs and zest, beating well. Add the flour and salt, folding gently but thoroughly, then the milk. Spoon into the tin and put in the oven.

Make the syrup: Put the juice and sugar into a small pan and heat gently so that the sugar dissolves.

Bake the cake for 45 mins or until golden and risen although it will sink on cooling. Test as normal with a skewer. As soon as it's done, puncture the top all over and pour the syrup over it - allow to sink into the middle as well as round the edges.

DON'T take the cake out of the tin until it is completely cold or it may crumble.

That took me ten minutes to find and type - just make sure you"wish" a piece of it to me ! ! !
