    Wings 1st

    2 lbs chicken wings (about 12 wings)

    3 Tbsp butter, melted

    4 Tbsp bottled hot pepper sauce (like Crystal or Frank's Original)

    1 Tbsp paprika

    1/2 teaspoon salt

    1/2 teaspoon cayenne pepper

    1/4 teaspoon black pepper

    Celery sticks (optional)

    Blue cheese dip

    1/2 cup sour cream

    1/2 cup crumbled blue cheese

    1/2 cup mayonnaise

    1 Tbsp white wine vinegar or white vinegar

    1 clove garlic, minced


  2. I bake mine first. For about 20-30 min at 350. This ensures that they are cooked all the way thru with out burning. Then I either let them cool and put in the fridge or in the freezer.

    Then I fry my wings in hot out. If you don't have a fryer put about 2 inches of oil in the pan. Put skin side down to crisp it up then flip. Or drop in a fryer heated to 350. They only really need say 3-5 min. Drain on brown paper towels or in the drain basket.

    Toss in Franks red hot sauce that has been heated up with butter, garlic, and itallian seasoning.

  3. Cajun Chicken Wings

    3 pounds chicken wings

    1 cup canola oil or vegetable oil

    1 cup white wine vinegar

    2 tablespoons hot pepper sauce (preferably Tabasco)

    2 tablespoons dried thyme

    2 tablespoons cayenne pepper

    1/4 cup garlic powder

    4 teaspoons salt

    1/2 cup light brown sugar, packed

    1/4 cup honey

    2 1/2 cup flour

    1 teaspoon salt

    1 bunch green onions, cleaned, but with roots attached and all but 2 inches of greens cut off on the diagonal

    Combine vinegar, hot pepper sauce, thyme, cayenne, garlic powder, salt, brown sugar and 1/4 cup honey in large bowl with a lid or a plastic bag that can be easily sealed then set the bag on plate. Add chicken wings and toss well to coat with marinade. Refrigerate overnight, turning chicken wings several times in marinade.  Heat oil in electric skillet at 325 to 350º or a large skillet on medium heat. Drain chicken in a colander. Fold the small end of the chicken wing over the top of the big part of chicken wing. Combine flour and salt to a plastic bag, add 3 or 4 chicken wings to the bag of flour and shack. Remove the wings, carefully add chicken wings to hot oil. Turn wings every 2 to 4 minutes as needed to keep them from burning. When the chicken wings are golden brown and cooked through, remove and drain on a rack over paper towels. Garnish with clusters of green onions.

  4. I also love fried hot wings.  Put your flour coating mixture together with flour, salt, pepper, cayenne pepper, ground cumino and chili powder.  Coat well and fry.  Spicy all alone, and may still be dipped in your favorite sauce.

    soak chicken wings in milk, or brush with egg... dipp in the flour and fry!

    i do it with chicken legs or b*****s (hate wings) and its DELICIOUS!
