Question:

Does anyone have a good and easy indian dish?

I really want to make an authentic indian dish but i'm vegan...but i know that a lot of hindu people don't use animal products due to the religion and belief that all life is sacred...can anyone suggest a website or recipe that is authentic or close to it that's vegan? Thank you!!!

ps...i LOVE the spicy stuff!!!lol! and paneer is cheese so nothing with that...lol!

  1. Easy Indians:

    Indian Spinach and Potatoes

    Ingredients (use vegan versions):

        2 large potatoes(peeled and cubed into 1/2 inch pieces)

        1 head on fresh spinach (Wash and cut into small pieces)

        2 pieces of Solid Spicy Curry

        3 tablespoon of olive oil

        salt and pepper

        dried oregano

    Directions:

    Peel and cube potatoes, and then boil.  When done, set aside.

    In a large sauce pan, place olive oil and when hot, add spinach, and curry.  Cook for 10 minutes, and add salt, pepper and oregano to taste. (Only a pinch of oregano to bring out flavor).

    When spinach is soft, add potatoes.  If it looks to dry, add a bit more oil.  It should have a thick, yet moist consistancy.

    Enjoy with rice and other Indian dishes.

    Serves: 4, Preparation time: 30 Mins

    Curried Chickpeas

    Ingredients (use vegan versions):

        2 - 3 small onions

        3 teaspoons olive oil

        2 cloves garlic

        1 teaspoon of minced ginger

        2 16oz cans of chick peas

        2 teaspoons of tomato paste

        1/4 teaspoon curry powder

        1/4 teaspoon garam masala

        1/4 teaspoon dried pepper seeds (optional)

    Directions:

    1. Warm the olive oil in a large skillet with large sides.  Finely chop the onions, garlic and ginger.  When oil warm, add the onion, and garlic and ginger.  Cook until onions are tender.

    2. In a food processor, crush one can of chick peas.  Add all chick peas, the tomato paste and the spices to the skillet.  Add the water in the chick peas cans as well.  It has good flavour.

    3. Stir the mixture.  Bring to a soft boil (medium heat).  Continue to simmer until the mixture is at your desired consistancy.  I like it thick, so it simmers for about 30 minutes.

    4. Serve hot over a bed of rice.  Serves 4.  Will make great leftovers, if there was ever any left over.

    Fruity Veggie Curry

    Ingredients (use vegan versions):

        1 teaspoon paprika

        2 teaspoons cumin

        1 teaspoon coriander

        2 teaspoons turmeric

        1 teaspoon fresh chopped coriander

        200g soya chunks

        small tin pineapple chunks, in own juice

        1 onion sliced, vegetable oil for frying

        1 small tin potatoes cut into even sized pieces

        1/4 pint soya milk (sweetened)

        1 1/2 to 2 tablespoon mango chutney

    Directions:

    Mix together the pineapple juice and all the ground spices.  Pour over the soya chunks and cover and leave to marinate (2 hours min, but preferably overnight)

    Fry the onion in oil until softened.  Add the potatoes, soya chunks, pineapple and marinade.  Simmer for 15 minutes.  Now add the milk. (if it is too runny, thicken with corn flour).  Stir in the mango chutney (& add more to taste) Cover and heat gently for a further 10 minutes.sprinkle with fresh coriander.  Serve on a bed of pilau rice with poppodoms.

    Serves: 4, Preparation time: 25 mins

  2. you can use chicken broth in something u make, srry i dnt know any recipes or websites. good luck! :)

I love to make a spicy potato and cauliflower dish called Aloo Goobi, I pre blanch my potatoes and cauliflower together and then saute fresh ginger, garlic, onions and a ground seed mix or just plain old curry powder and when that is fragrant, add some chopped fresh tomato and then the potatoes and cauliflower back and saute for 2 minutes a bit of water and then place lid on, simmer for 10 minutes and serve with chopped coriander and soya yougart with more fine chopped fresh ginger. I also like to make a chickpea dish called Channa Dal all veggie and vegan suitable are both these dishes, I used to use veg ghee but it is to expensive now.

    You can add fresh chilis or dried in the first stages, but the longer you cook them the hotter they can get, so either add them later or take out the seed, but if you like hot food then whole and lots.
