I know the cheese used in the filling isn't readily available in the US. Any ideas for substitutes?

yeh, it tastes great so i hope you like it to:

make normal bread dough and then add some cane sugar, not too much but enough to taste and ti upto you really and then add the soft cheese and mix well and then bake like normal bread, should taste great.
