  1. We have found a few recipes we really like....

    SHEPHERD'S PIE

    INGREDIENTS...............

    4 large potatoes, peeled and cubed

    1 tablespoon butter

    1 tablespoon finely chopped onion

    1/4 cup shredded Cheddar cheese

    salt and pepper to taste

    5 carrots, chopped

    1 tablespoon vegetable oil

    1 onion, chopped

    1 pound lean ground chuck

    2 tablespoons all-purpose flour

    1 tablespoon ketchup

    3/4 cup beef broth

    1/4 cup shredded Cheddar cheesse

    DIRECTIONS

    Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, finely chopped onion and 1/4 cup shredded cheese. Season with salt and pepper to taste; set aside.

    Bring a large pot of salted water to a boil. Add carrots and cook until tender but still firm, about 15 minutes. Drain, mash and set aside. Preheat oven to 375 degrees F (190 degrees C.)

    Heat oil in a large frying pan. Add onion and cook until clear. Add ground chuck and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.

    Spread the ground chuck in an even layer on the bottom of a 2 quart casserole dish. Next, spread a layer of mashed carrots. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.

    Bake in the preheated oven for 20 minutes, or until golden brown.

    This is a twist on it... very good though.........

    MEXICAN SHEPHERD'S PIE

    INGREDIENTS..............

    1 1/2 pounds ground chuck

    1 onion, finely chopped

    garlic powder to taste

    salt and pepper to taste

    1 (14.5 ounce) can diced tomatoes

    1 (1.25 ounce) package taco seasoning mix

    3/4 cup hot water

    1 (11 ounce) can whole kernel corn, drained

    1 (8.5 ounce) package corn muffin mix

    1 cup shredded Cheddar cheese (optional)

    1 (2.25 ounce) can sliced black olives (optional)

    DIRECTIONS

    Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13 inch baking dish with cooking spray.

    Place the beef and onion in a skillet over medium heat. Cook until beef is evenly brown and onion is tender. Drain grease. Season with garlic powder, salt, and pepper. Mix in the tomatoes, and cook 5 minutes. Stir in the taco seasoning and water. Bring to a boil, reduce heat to low, and continue cooking 5 minutes, until thickened. Transfer to the prepared baking dish, and top evenly with corn.

    Prepare the corn muffin mix according to package directions. Spread evenly over the corn layer in the baking dish.

    Bake 20 minutes in the preheated oven, or until puffed and golden. Garnish with olives and cheese.

  2. DELICIOUS SHEPHERD'S PIE

    2 lb. ground chuck

    1 lg. onion

    1 sm. green pepper, optional

    2 cans whole kernel corn

    1 can tomato soup

    2 tsp. sugar

    1 can water

    Prepared mashed potatoes

    Brown ground meat and onions; drain. Add pepper (optional). Add 2 cans drained whole corn. Stir in 1 can tomato soup plus 1 can water, 2 teaspoons sugar and salt to taste. Simmer 1 hour.

  3. I just saw Rachel Ray make a yummy looking shephards pie with ground turkey and mac and cheese on top.  I'm sure you could sub the chuck for the turkey and beef stock for the chicken stock
