Does anyone have a recipe for Sunomono (Japanese Cucumber Salad)?

I tried looking up the recipe online, but the one I had today had crunchy type cellophane noodles, and the sauce I believe had a little tint or red to it. None of them that I have found, sounds like that. Thanks!

  1. This is the one that I use.  I love it.  First had it in Japan and tried and tried to dupicate the recipe.  I think I am close.

    Ebi-Sunomono

    1 lb shrimp

    1 sm cucumber

    1 oz wakame; (dried seaweed)

    1 t sesame seeds; toasted

    Sambaizu Dressing:

    1/2 c water

    1 sm kombu-dashi

    1 c rice vinegar

    1/4 c mirin

    1/4 sm fresh ginger root

    1/4 lemon juice

    Boil all sauce ingredients 20-30 minutes over medium heat then remove from heat and cool. Rinse wakame with cold water and drain. Cut into thin crosswise slices and shred horseradish and cucumber. Serve in small bowls pouring dressing and sprinkle with sesame seeds.


  2. Here's the recipe I usually use to make sunomono!

    Sunomono

    (Japanese Cucumber Salad)

    2 medium cucumbers, peeled and seeded

    2 teaspoons salt

    1/3 cup rice vinegar

    1 tablespoon sugar

    2 teaspoons Kikkoman Soy Sauce

    1/4 teaspoon grated fresh ginger root

    Cut cucumbers into thin slices; place in bowl and sprinkle with salt. Let stand at room temperature 30 minutes, or until cucumbers are softened. Drain and squeeze out excess liquid.

    Combine vinegar, sugar, soy sauce and ginger in serving bowl; add cucumbers and mix well. Chill thoroughly before serving.

    Makes 4 servings
