  4. Season that baby with salt and pepper and sear it a hot skillet with no more than 2T of vegetable oil, bacon grease or lard. Color it on both sides.  This should take no more than 3 minutes per side. Lay the steak in a baking pan and set it aside.  Add about 3/4 cup red wine, or water to the skillet and scrape up all the flavor bits. Pour that over the steak. Dice a small onion, put that on top of the steak. Add a clove of minced garlic.

    Cover the steak with foil and seal the edges.  Bake at 375 until it's fork tender. I don't know how large or thick your steak is.  This could take anywhere from an hour to two hours.  It's okay to check on the meat.  Just be sure to reseal it each time you pull it out of the oven.  Add a little water IF you are loosing liquid during cooking.  

  5. Braising just means to brown evenly in a large frying pan with olive oil, butter after you season with salt, pepper and garlic.  Brown well with fairly high heat on both sides, this gives you some good flavor for your gravy. Be sure to add all the goodies when you transfer it to your baking pan.
