I was given a heap of macadamia nuts, and I love macadamia nut butter, but I don't know the recipe.

Does anyone out there know how to make a delicious macadamai nut butter.

  1. Not sure what you mean by macadamia nut butter, so here are two different approaches. The first is for a peanut butter type of thing and the second is for something like garlic butter.

    Ingredients

    1 cup macadamia nuts, soaked and dehydrated completely

    1½ tablespoons oil, optional. Macadamia oil is best but any light oil will do.

    Salt to taste (optional)

    Sugar or honey to taste (optional)



    Preparation

    Soak the nuts overnight in the refrigerator. Dehydrate completely (usually around 24 hours at a low temperature).

    Process one cup of nuts at a time in a high-powered blender Use a slower speed, for 60-90 seconds, or until you are happy with the texture.

    Store in a glass jar in the refrigerator.

    Ingredients

    225 g butter

    4 tablespoons nuts, finely chopped

    1/8 teaspoon salt

    1/8 teaspoon pepper (optional)

    Preparation

    Cream butter in a small bowl with an electric mixer. Transfer to blender or food processor.

    Add remaining ingredients and blend well.

    Place butter in plastic wrap and form into a log shape or place in a small bowl and cover tightly.

    Refrigerate

    This one is a simpler version of the first type:

    Ingredients

    • 2 cups unsalted macadamia nuts

    • 3 tablespoons macadamia or other vegetable oil, divided

    • 1/4 teaspoon salt

    • 1 teaspoon sugar or honey, optional

    Preparation

    1. Process nuts, 2 tablespoons oil, salt and sugar or honey 30 seconds.

    2. Puree to spreading consistency adding remaining oil if needed. Store in airtight container in the refrigerator.

    You should use raw nuts for the first recipe, but I think raw or roasted would be OK for the others.
