Does anyone have a recipe for sambar (South Indian condiment)?

This is the sauce served when u order a dosa masala it is reddish and i think it has tamarind in it .

  2. 1/2 lime sized ball Tamarind

    1 cup Toor Dal (or red lentils)

    1/2 teaspoon Turmeric Powder

    2 teaspoons oil

    Salt to taste

    5 small dry red chilies (or to taste)

    8 Curry Leaves (see note)

    1 medium onion (shallots are preferable)

    1/2 teaspoon mustard seeds

    1/4 tsp asafoetida (optional)

    1/2 teaspoon fenugreek seeds

    1 large tomato

    2 tablespoons sambar powder (see note)

    1/4 cup chopped cilantro leaves (also known as coriander leaves)

    1 cup of a vegetable of your choice like green beans, chopped carrot

    Directions:

    Soak the tamarind in 1 cup water for 20 minutes. Squeeze it out, adding water little by little to prepare 1 cup of juice.

    Choose a heavy cooking pot. Wash and clean the dal. Boil 2 cups of water and add the dal, turmeric powder and 1 teaspoon of oil. As the dal boils, skim off the foam and discard. Boil until the dal is soft and then mash it coarsely. If needed, add more water as it is boiling but do not let it get too watery. If you use a pressure cooker it will take about 5 minutes.

    I love to cook.  I gave you a couple of sites with different variations.  Have a go at it and see if this one works.

  3. Ingredients:  



    • 1 Cup toovar Dal

    • 1/ 4 cup Grated coconut

    • 3 Red chilies

    • 1 Green peppers cut into pieces

    • 1 Onion chopped

    • 1 Tomato cut into pieces

    • 1 tsp Mustard

    • 1 tsp Tamarind

    • 1 Pinch hing

    • 2 tsp Channa dal

    • 3 tsp Dhania seeds

    • Pinch of turmeric

    • Coriander leaves

    • 3 tsp Salt





    Cooking Instructions:

    • Wash toovar dal and boil it with 3 cups of water.  

    • Fry chana dal, hing, dhania seeds and red chilies for few minutes.  

    • Add grated coconut and fry again.  

    • Grind the mixture with sufficient water.  

    • Heat oil in a frying pan and fry green peppers.  

    • Boil vegetables, tomatoes, tamarind paste, turmeric and salt in water.  

    • Add to it the mixture of third step and cook again for 5 minutes.  

    • Add boiled dal to it and again boil it.  

    • Meanwhile fry the mustard seeds and onions.  

    • Add the above contents along with coriander leaves to the mixture and mix well.  

    • Sambar is ready to serve.
