Does anyone have a recipe for seasoning that goes in sausage?

I am looking for a tried and true recipe for seasoning for sausage. Something similar in taste (mild) to what you would buy at a grocery store. Thanks for the help.

    home made recipe:

    6 lbs lean pork

    3 lbs fatty pork

    1/4 cup sage

    2 tablespoons pepper

    2 tablespoons salt

    2 tablespoons cloves, ground

    2 teaspoons McCormick's seasoning salt

    nutmeg, grated

    Directions

    1Put pork through fine blade of meat grinder twice.

    2Put meat in mixing bowl; add remaining ingredients. Knead well with hands to blend spices thoroughly.

    3Shape into 36 patties.

    4Fry at once or freeze.

    2 teaspoons salt

    1 teaspoon black pepper

    4 teaspoons fennel seeds

    4 teaspoons oregano

    1 teaspoon garlic powder

    8 lbs pork shoulder

    Directions

    1Cut the pork into 1 1/2" cubes.

    2Sprinkle combined seasoning on pork and toss to distribute.

    3Grind.

    4Shape sausage into patties.

    Krapt and Sausage (Sauerkraut and Smoked Sausage

    1 lb hard sausage(Kielbasa, Smoked Sausage, Etc.)

    1(32ounce)jar sauerkraut, drained

    1 medium onion, Medium dice

    1 1/2 teaspoons minced garlic

    1 tablespoon olive oil

    Directions

    1Slice Sausage lengthwise and then cut the pieces into half moons as thick or as thin as you would like. Thinner slices create a meatier presentation and thicker slices create a meatier bite.

    2In a large skillet or a medium pot heat oil and sauté onion and garlic until onion is translucent.

    3Add sausage and almost sear it.

    4Add drained k***t, stir and heat throughout.

    4 lbs ground turkey(ground pork can be substituted)

    4 teaspoons garlic, granulated

    2 1/2 tablespoons thyme

    1 tablespoon fennel seeds

    1 tablespoon parsley

    1/2 teaspoon red peppers, crushed

    1/8 teaspoon black pepper

    1/2 teaspoon salt

    1/4 cup quick oats

    Directions

    1Place ground meat in a large bowl and add garlic, thyme, fennel seeds, parsley, red pepper, salt and oats.

    2Mix well, form into patties and individually wrap.

    3Use immediately or freeze for future use.


  2. I use the following to make breakfast sausage for my family.  If you like, skip the pepper. This recipe works with about 2 lbs of meat.  Plus, it's better when it's sat overnight.  Kind of marinates the flavors in the meat.

    2 teaspoons dried sage

    2 teaspoons salt

    1 teaspoon ground black pepper

    1/4 teaspoon dried marjoram

    1 tablespoon brown sugar

    1/8 teaspoon crushed red pepper flakes

    1 pinch ground cloves

  3. Get a pepper mill and some good black peppercorns.

    For breakfast sausage, sage and allspice is good.  BUT GO EASY ON ALLSPICE (if you started with 3 pounds of meat, no more than 1/4 tsp)!!!!!!!

    For Italian, you can't beat basil, oregano, and fennel (fennel is a must).

    For a pound of breakfast sausage I would add a TBSP of sage, a teaspoon each of salt, thyme, and pepper, and maybe a pinch of allspice or nutmeg.  For Italian sausage, I would add a TBSP of toasted fennel seeds, a teaspoon each of oregano, basil, thyme and salt and a half teaspoon of pepper.

    But then I like peppery and fennelly sausage.  

    So adjust these basic measure to what you think you would like, fry up a little piece, and see if it is to your liking.  Your friends will be impressed!
