Does anyone have a recipe for the following cannoli variations?

I had these in a restaurant awhile back on vacation but was wanting to attempt them at home.

Red Velvet

Pumpkin

Chocolate Raspberry

I dont have a recipe off hand, but here is a recipe for cannoli filling. Substitute 1cup of pumpkin and 1 cup of rasberries for the citron. Substitute white chocolate for the semisweet chocolate for red velvet and add alittle red food coloring.

1 (32 ounce) container ricotta cheese

1/2 cup confectioners' sugar

1 cup chopped candied citron

4 ounces semisweet chocolate, chopped
