Does anyone have a simple gluten free bread recipe?

I am a undiagnosed celiac and need simple recipes to stay on track, i have a weakness when it comes to lunch time i always try to save money and take a sack lunch to work. I found the Ezekiel bread in the freezer section but the taste is something less than desirable. At the same time it is very expensive and defeats the purpose of saving money with a sack lunch. I have found some by googling, but they all seem so complicated and call for a few things i have never heard of. I do have a bread maker. I guess my biggest fear is for it to end in a big flop. literally!

  1. Unfortunately, baking gluten free is a bit more complicated and calls for ingredients that are expensive (like xanthan gum, but one bag will last you a long time). But if you find good recipes, it's worth it to make your own stuff. I've had good luck with recipes from some sites listed below.

    La Tortilla Factory makes gluten free wraps that work well for sandwiches. I buy them at a regular grocery store. Sometimes I use a big piece of lettuce to hold sandwich fillings. I've even made pancakes to roll up ham and cheese in. You can find Bob's Red Mill pancake mix at most stores.  


  2. The cheapest and the most obvious or ignored gluten free bread in United States is Corn Tortilla.

    Flat breads made of any grain other than wheat and barley is Gluten free. Oats is open for question.

    It leaves Millet, Sorghum, Buckwheat, Rice, Corn...

    If you are close to an Indian restaurant, you are in luck, order Indian flat breads made of Millet, Sorghum, Corn, or rice.

    You can buy Buckwheat pancake mix in any store. Little creativity wil let you make a lots of goodies with it.

  3. 2½ cups blanched almond flour

    ½ teaspoon sea salt

    ½ teaspoon baking soda

    3 eggs

    1 tablespoon agave nectar

    ½ teaspoon apple cider vinegar

       1. In a large bowl, combine almond flour, salt and baking soda

       2. In a medium bowl, whisk the eggs, then add agave and vinegar

       3. Stir wet ingredients into dry

       4. Scoop batter into a small (approx. 6 x 3 inch) well greased loaf pan

       5. Bake at 300° for 45-55 minutes on bottom rack of oven; until a knife comes out clean

       6. Cool and serve

    Makes 12 slices
