Does anyone have any good ideas for vegetarian meals?

I'm starting to be a vegetarian and i was wondering if anyone had any good recipes or anything.

  1. Check out www.vegweb.com for tons of recipes.  There are also a lot of great vegetarian cookbooks out there.  If you're a pretty good cook, check out "The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson.

  3. This is a recipe for a super easy and cheap Asian salad.  It sounds kind of funky but its SO good...I promise.  

    1-1lb shredded cabbage (bag)

    2 pks. Oriental Ramen Noodles (cook as directed)

    1 bunch green onions

    Crush noodles slightly, cook, drain and let cool. In a large bowl combined onions, cabbage and flavor packets from noodles. Mix 1/3 cup vinegar, 1/2 cup sugar (can use splenda), 1/2 cup salad oil. Pour over noodles and other ingredients mix well. Refrigerate.

  5. Get a nice big bowl, steam up a bunch of your favorite veggies, cook some rice, mix it all together and add some soy sauce (If you like it) or instead of the soy sauce chop up some mock meat and mix it in there! Both ways are great and that's one of my favorite meal!

    Skillet Baked Ziti

    from the Episode: Easy Skillet Suppers

    To complete this recipe in 30 minutes, preheat your oven before assembling your ingredients. If your skillet is not ovensafe, transfer the pasta mixture into a shallow 2-quart casserole dish before sprinkling with the cheese and baking. Packaged pre-shredded mozzarella is a real time-saver here. Penne can also be used here.

    Serves 4 1 tablespoon olive oil  

    6 garlic cloves , minced  

    1/4 teaspoon red pepper flakes  

    Table salt and ground black pepper  

    1 (28-ounce) can crushed tomatoes  

    3 cups water  

    12 ounces ziti (3 3/4 cups)  

    1/2 cup heavy cream  

    1/2 cup grated Parmesan cheese  

    1/4 cup minced fresh basil leaves  

    1 cup shredded mozzarella cheese  

    Making the Minutes Count: Measure the water and the pasta before you begin cooking. Prep the Parmesan and basil while the pasta cooks.

    1. Heat Oven: Adjust oven rack to middle position and heat oven to 475 degrees.

    2. Simmer Ziti: Combine oil, garlic, pepper flakes, and 1/2 teaspoon salt in 12-inch, ovensafe nonstick skillet and sauté over medium-high heat until fragrant, about 1 minute. Add crushed tomatoes, water, ziti, and 1/2 teaspoon salt. Cover and cook, stirring often and adjusting heat as needed to maintain vigorous simmer, until ziti is almost tender, 15 to 18 minutes.

    3. Add Cheese and Bake: Stir in cream, Parmesan, and basil. Season with salt and pepper to taste. Sprinkle mozzarella evenly over ziti. Transfer skillet to oven and bake until cheese has melted and browned, about 10 minutes. Serve.

    Tostadas:

    Tostada shells (hard round taco like shells)

    vegetarian refried beans (these are made without lard).

    Just heat up a can of beans in the microwave.  Spread on the shell to your taste, add some onion if you want finely chopped, add some cheese.  Heat in microwave 1 minute.  Add sour cream.

    It's available at Pizza Hut... Don't know the recipe though..

    Another idea is the Quorn instead of meat.. it tastes the same as meat! Hope that helps.. >.>

  10. Buy Quorn instead of meat. Then you can just interpret that into all your usual meals. We make Kormas and Spag Bols with it.

    1 large eggplant - cubed

    1 medium zucchini - cubed

    1 red pepper - cubed

    1 large onion - cubed

    1 large very ripe tomato - cut in chunks

    4 gloves of minced garlic

    2 teaspoons of herbs de provence (an herb blend found in groceries)

    2 tablespoons olive oil

    salt and pepper to taste

    Heat the oil in a heavy-bottomed pan.  Saute the garlic and onions until they begin to soften .. add the remaining ingredients and sautee about 20 minutes until all of the vegetables have soften (but not turned to mush)

    you can have this with pasta, mashed potatoes or rice .. or the French way .. with some crusty French bread and a glass of red wine.  Add some grated cheese if you'd like.

    It also makes a good sandwich spread.

  12. VEGETARIAN CHIMI CHANGAS  

    2 cloves garlic, chopped

    10 medium mushrooms, sliced

    1 large green pepper, sliced

    1 medium-large onion, sliced

    1 15 oz can black beans

    1/2 cooked white or brown rice

    1 cup mozzarella cheese, shredded

    10" tortillas

    cooking oil

    garlic powder

    black pepper

    crushed red pepper

    onion salt

    In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp. In a bowl mix cooked rice, black beans together. In another pan heat about 1/2" inch of cooking oil. Warm the 10" tortillas in the microwave until soft. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper. Fold in the edges tightly, and place folded edges down in hot oil. Brown each side until golden brown. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa. Very tasty!!

I'm not a vegetarian, but my fiance and I often skip meat at dinner time.  One of our favorite things to eat is just salad and homemade veggie pizza.  We get the pre-made pizza crust, and then top it with our favorite veggies.  We usually do zuccini, olives, onions and mushrooms.  Sometimes we do spinach, or artichoke...it's just whatever you like.  Another meal we like is "boiled dinner."  It's just cabbage, onions, potatoes and carrots slow boiled with whatever seasonings and spices you like.  A good website is www.recipezaar.com  They have all kinds of recipes for everything you can imagine.  I have one posted on there for tabouli, which is a very good vegetarian dish.  Good luck!

    some good and easy things to make that are vegetarian are;

    soups

    salads

    tacos

    wraps

    burgers

    curries

    stir-fries

    pasta

    pizza

    most of theses things are not traditionally vegetarian but you can change them to make them vegetarian

    you can add things like beans, lentils, veggies, tofu and also if you go to the vegetarian section in your supermarket you will find many different things that will hopefully give you some ideas.
