  1. Enchilada bake: Layer tortillas, vegetables, beans, and cheese. Make 2 or 3 layers, pour enchilada sauce over the top, bake for about 20 minutes. It's the best!


  2. ===============Guacamole================

    1 Avocado

    1 tomato (I use a red bell pepper instead though)

    1/2 onion  

    salt and pepper to taste

    Lemon juice.

    Cut the tomato/bell pepper and onion into squares. Take an avocado, cut in half, remove seed. Mash avocado till texture is like mash potatoes. I prefer clumps but whatever floats your boat. Mix in peppers/tomatoes and onions. Salt and pepper to taste. And you got awesome dip!

    ========== Hummus ===================

    This one takes a little bit of practice. But once you got it, it's so simple.

    A can of chickpeas

    1/4 cup of vege broth

    Seasoning. I prefer garlic or dill.

    (Optional) 3 tablespoon of Tahini Oil

    Blend all ingredients in blender until the consistency is what you like. If you like it thicker, add more chickpeas.

    =========== Strawberry/Berry Shake ==============

    Some berries

    Some vanilla yogurt or silken tofu

    Ice

    Blend. If it is too thick, add some skim milk.

  3. I love eggplants and i cook them many ways here is one of them,really easy and so tasty you will love this recipe.

    I use Italian eggplants the smaller kind.

    4 eggplants washed and cut in half

    1 large onion sliced

    1 green pepper cut up

    1 red pepper the same way

    1 cup prepared tomato sauce

    1/2 cup water

    salt+pepper and 1/2 tsp sugar

    Saute the eggplants in a little vegetable oil on both sides and place in a Pyrex pan

    saute onion and peppers in a little oil  and spoon over eggplants

    mix tomato sauce with water and gently pour over eggplants.

    salt and pepper food and cook in the oven 20-25 min.

    Optional:You can use some crumbled feta if you like.

    An amazing way to enjoy aubergine,actually we are talking about real food  and please people if you want to be fair, rate recipes after you try them.

  5. OK, a couple of easy favourites:

    Mushroom soup:

    a good dollop of olive oil/hemp seed oil/butter

    an economy tray of mushrooms, plus a few fancy ones for the variety if you choose

    2 stock cubes

    salt

    pepper

    an onion

    3 cloves garlic

    a little cream/soya cream

    fry the onion and garlic in the oil/butter till caramelised.

    roughly tear the musrooms into the pan and fry gently for a few minutes till they start to brown.

    boil about a pint to a pint and a half of water with the 2 stock cubes and add to the pan. bring the whole thing to the boil then allow to simmer for about 20 minutes

    take off the heat and allow to cool slihtly before belending

    add salt pepper and a dash of cream

    serve with fresh bread. yummy

    to make tomato soup follow he same process but use a couple of sticks of celery along with the garlic and onion.

    add a couple of cans of tomatoes, some salt and some pepper

    add your stock, bring to the boil and simmer for 20 minutes.

    add fresh torn basil to season.

    quick and easy to make, and pretty healthy too.
