Does anyone have any great suggestions for a Eurotrip itinerary?

Your question really depends on the amount of time and money you have available.  Also, what are your interests?  Are you more likely to enjoy art; the Prado and Louvre are obvious destinations.  Or are you a thrill seeker?  See a bullfight and hike the alps.  Maybe you just want to eat and drink yourself silly... go anywhere and keep an open mind.  Plan a lot of padding into your budget if you want an experience-rich trip or be prepared to live on bread and cheese and see the city from the local cafe.  Life is not cheap in Europe right now.

    If you want variety, grab a Eurail pass and make stops.  Spend at least a couple days per city and try not to rush yourself too much.  Starting as far south and traveling northbound, I'd start near Morocco/Gibraltar (if you start far enough south, you can actually spend a day in Africa before heading north.)  Then on to Lisbon or Granada, Madrid, Bordeaux, Paris, Monaco, and Rome before turning north to see Venice.  Cross into Slovenia for an adventure, then continue into the Hapsburg empire through Budapest and then Vienna; east to Salzburg, and north into the Czech Republic or Germany.  

    I also love England and Scotland (have never personally been to Wales or Ireland, but have heard they are beautiful too), which are great if you want to play it safe or return to the comfort of an english speaking locale.

    Really you can't go wrong.  Just do it.  If you're young, you can take advantage of the hostels.  Travel safely, but do wander off the beaten path once or twice to get some local flavor... good luck!
