How about a Croissant Shop?

You could have delicious Ham and Cheese Croissants that are great for snacks and Breakfast.  

Plain Croissants and Chocolate Croissants.  Supplement with

Coffee, Tea, Hot Chocolate etc.

In a small town, to be successful, you have to sell essentials. like food.... too bad

Consider a retail store that offers books/magazines or consumable supplies but also offers classes in specific topics that your store will cater to... computer users, crafts, home business, green products, teen interests, music, cookbooks, collectibles, etc. Just remember that the superstores and internet have destroyed alot of small businesses and the profit potential so you need to think outside the box and offer specialized service to your customers they cannot get from other businesses. Focus on attracting and keeping your target customers. Offer new and exciting products and services.
