Does anyone have any low sodium soup recipies they would care to share?

Soup is my favorite food and I need to eat foods with low sodium, but am tired of the same ole, same ole..., so any recipes would be very much appreciated!

  1. Rather than give you specific recipes, here are a couple of techniques:

    1.  Make your own soup, starting with low/no sodium broth or stock.  Either chicken, beef, or vegetable.  Stay away from bullion cubes as they have a lot of sodium.

    2.  Add all the veggies you want!  Isn't that great?  Carrots, onion, celery, cubed potatoes, beets, parsnips, turnips, radishes, cabbage (red and green), whatever....

    3.  Herbs are your friends.  Use them to really enhance the flavors, especially bay leafs, oregano, parsley, etc.  Use fresh and add them at the end (except bay leaf, which should be added early on and then removed).

    4.  If you have any leftover meat, such as chicken, beef, pork, veal, lamb, etc., add it in bite-sized pieces.

    5.  Add pasta (macaroni, penne, etc.) and let it cook in the soup.  How easy is that!!!!  Have fun.  Add bow-tie pasta!

    6.  Add legumes, such as beans, lentils, peas.  Great fiber and taste.

    7.  Season with fresh-ground black pepper.

    8.  Add seasonings, such as low-sodium soy sauce, balsamic vinegar (one of my favorites), or even molasses.

    Soup is one of the most versatile foods ever.  Experiment widely and you'll never be bored!  It's all up to your imagination.....
