  4. DORITO CASSEROLE

    2 lb. hamburger

    1 c. onion

    1 can cream of chicken soup

    1 can cream of mushroom soup

    1 can Rotel tomatoes, mashed

    1 c. evaporated milk

    1 med. pkg. cheese Doritos, crushed

    2 c. Cheddar cheese

    Brown and season hamburger, onions, drain. Mix all ingredients, slightly grease casserole. Bake 30 minutes at 350 degrees. Sprinkle with grated cheese. Put back in oven 2 minutes to melt cheese.

  5. 1 1/2 - 2 lb Italian Sausage sliced to cook faster, fully cook in olive oil. Just enough oil to cover bottom of pan.  Add a splash of soy sauce.

    Add 1 pkg Rice mix any flavor. I usually add a little more plain rice to make it stretch. Add 2 cups water. Simmer till rice is cooked water evaporated. You can also add other meats or fish. I made it with sausage and shrimp once and my family loved it.

    1 can cream of onion soup

    1 can chedder cheese soup

    2 cups of your favorite shredded cheese (I like colby jack)

    mix all together and put in crockpot on low for 3-4 hours

  9. Tuna Casserole

    Saltine crackers

    12 oz tuna

    one can vegetable beef soup (or any soup similar)

    milk

    Crush some of the crackers on the bottom of casserole dish, about 1/2 inch.  Drain and layer on the tuna.  Add the soup.  Pour one soup can of milk over all.  Top with more crushed crackers.  Cook for 50 to 60 minutes in 350 over.

    brown 2 lbs ground beef, prepare 1 box penne noodles. pour both in 13x9 dish with large jar of spaghetti sauce and top with mozzarella (or provolone...yum) bake at 350 until cheese is melted.

    2 pounds round steak or cube steak

    1 medium onion, chopped

    1 green pepper, chopped

    6 medium potatoes, cubed

    6 medium carrots, cubed

    1 cup frozen peas

    8-oz. can tomato sauce

    1 teaspoon salt

    Worcestershire sauce, brown sugar, chilli pepper, black pepper, to taste, if desired

    Pound steak and cube. Roll in seasoned flour. Brown in shortening with chopped onions and peppers. Place into large Dutch oven.

    Pour in sauce with 2 cans water.

    Add potatoes, carrots, and peas. Cook slowly until tender, about 1 hour


  13. This casserole is absolutely delicious. Instead of the link sausages, I use kielbasa.

    Hashbrown Potato/Sausage Casserole

    1 pound Brown & Serve link sausages (I prefer maple flavor)

    2 pounds. frozen hashbrowns potatoes, thawed

    10 oz pkg cheddar cheese, grated

    8 oz. sourcream

    1 can cream of celery

    1 tsp. salt

    1 tsp. pepper

    1/2 stick butter, melted

    Brown sausage, and set aside. Mix all other ingredients together. Put in lightly greased casserole. Bake at 350' for 45 minutes. Remove from oven, and place sausage on top. Cook for another 15 minutes. You can also use lil smokies or beef smoked sausage or kielbasa pieces instead of link sausages.

    PIZZA RICE CASSEROLE-Taste of home magazine

    3/4 pound ground beef

    1 medium onion

    2 cans (8 ounces each) tomato sauce

    1 tsp. sugar

    1 tsp. salt

    1 tsp. dried parsley flakes

    1/4 tsp. garlic powder

    1/4 tsp. oregano

    Dash pepper

    2 cups cooked rice (I use Success rice)

    1/2 cup small-curd cottage cheese

    1/2 cup shredded mozzarella cheese

    --- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the tomato sauce, sugar, salt, parsley, garlic powder, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. While the hamburger mixture is simmering, combine the rice and cottage cheese in a bowl; spoon half into a greased baking dish. Top with half of the meat mixture. Repeat layers. Sprinkle with mozzarella cheese. Bake, uncovered, at 325' for 30-35 minutes or until heated through and bubbly. Yield: 4 servings

    Baked Ziti Casserole

    2 pounds of hamburger, cooked and drained (optional)

    1 Pkg (16 oz) ziti or small tube pasta

    1 egg, lightly beaten

    1 carton (15oz) part-skim ricotta cheese, divided

    1/2 cup grated Parmesan Cheese, divided

    1 jar (28oz) spaghetti sauce ( I like to use extra sauce)

    Italian Seasonings to taste (add to spaghetti sauce)

    2 cups (8oz) shredded part-skim mozzarella cheese

    ~ Cook hamburger and drain grease, add to spaghetti sauce (If adding hamburger, you will need two jars of spaghetti sauce)

    ~Cook pasta according to package directions. Drain pasta; set aside. In a small bowl, combine the egg, ricotta and 1/4 cup Parmesan cheese.

    ~Spread one cup or more spaghetti sauce in a baking dish coated with non stick cooking spray. Top with a third of the pasta, half of the ricotta cheese mixture, 2/3 cup mozzarella cheese, 1 tablespoon parmesan cheese and 1 cup sauce.

    ~Repeat layers of pasta, ricotta mixture and mozzarella cheese. Sprinkle with 2 tablespoons Parmesan cheese. Top with the remaining pasta, sauce, mozzarella cheese and Parmesan cheese. Cover and bake at 375' for 45-50 minutes or until heated through. Yield 12 servings

    Hamburger Pie

    1# ground beef

    1/2 c. chopped onion

    2- 16oz cut green beans, drained

    1- 10 3/4 oz condensed tomato soup

    1/4c. of water

    salt and pepper to taste

    3-4 med potatoes, peeled and quartered

    1 beaten egg

    milk

    1/2 c. shredded chedder cheese

    Cook hamburger and onion till meat is browned and onion is tender; drain off grease.

    Stir in beans, soup, water and season with salt and pepper.

    Place mixture in a pan.

    Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.

    spread potatoes on top of meat mixture. Sprinkle with cheese.

    Bake, uncovered, in a 350 degree oven for 25-30 minutes.

    makes 4-6 servings (Can use instant potatoes. Make according to package but omit the butter. Remember: NO BUTTER to the mashed potatoes)

    Beef Taco Bake-Campbell's casseroles cookbook

    1 pound ground beef

    1 can (10 3/4 0z) campbell's condensed tomato soup

    1 cup chunky salsa or picante sauce

    1/2 cup milk

    6 (8 inch) flour tortillas or 8 (6 inch) corn tortillas, cut into 1- inch pieces

    1 cup shredded cheddar cheese (4 ounces) ( I sometime uses the Mexican cheese blends)

    1. Cook the beef in a skillet over medium heat intil the beef is well browned, stirring frequently to break up meat. Pour off any fat.

    Put thin layer of chili in Pyrex baking dish. Add a layer of corn dawgs, side by side. Add remaining chili until corn dawgs are covered. Add a layer of cheese. Bake at 350° F for 20 - 25 minutes until cheese is bubbly and starting to brown.

    Broccoli Chicken Casserole

    2-3 boiled chicken b*****s, diced into small chunks

    (just boil the chicken for at least 10-15 minutes or until no longer pink)

    Cool and then cut into chunks

    1 pkg broccoli

    1 can of cream of chicken

    Pepperidge Farm Stuffing

    1/2 c. mayonnaise

    1 1/2 tsp. lemon juice

    4 oz pkg mild cheddar cheese

    Boiled the broccoli for 5 minutes, then drain.(Boiling the broccoli speeds up the cooking time).

    Combine soup, mayonnaise, and lemon juice. Mix with broccoli and diced chicken. Sprinkle with cheese and stuffing mix. Bake at 350' for 35 minutes :0}

    Stove top Easy Cheesy Chicken Bake

    1 pkg (6oz) Stove Top Stuffing Mix for Chicken

    3 cups cooked chicken, diced (i have used less)

    1 (14 oz) frozen broccoli florets, thawed, drained

    1 can cream of chicken soup

    1/2 c. milk

    1 1/2 c. shredded cheddar cheese (i prefer cheez whiz or velveeta)

    Preheat oven to 400'. Prepare stuffing mix as directed on pkg; set aside.

    Mix chicken and broccoli in baking dish. Stir in soup, milk and cheese; top with the prepared stuffing.

    Bake 30 minutes or until cooked through
