  7. LAYERED FRUIT SALAD

    Fruit:

    2 cups cubed fresh pineapple

    1 pint fresh strawberries, hulled and sliced

    2 kiwi fruit, peeled and sliced

    3 medium bananas, sliced

    2 oranges, peeled and sectioned

    1 cup seedless grapes

    1 pint blueberries

    Sauce: 2/3 cup fresh orange juice

    1/3 cup fresh lemon juice

    1/3 cup packed brown sugar

    1/2 tsp. grated orange peel

    1/2 tsp. grated lemon peel

    1 tsp. pure vanilla extract

    In a sauce pan, bring to boil all ingredients for sauce except vanilla; simmer 5 minutes. Add vanilla and cool. Meanwhile, in a large clear glass salad bowl, arrange fruit in layers in order listed. Pour sauce over fruit. Cover and refrigerate several hours. 10-12 servings.

    PASTA SALAD

    8 ounces bow-tie pasta (3 cups)

    3/4 cup dried tart cherries

    1/2 cup chopped carrots

    1/2 cup chopped cucumber

    1/4 cup chopped green onions

    1/4 cup red wine vinegar

    3 tablespoons vegetable oil

    2 tablespoons lemon juice

    2 tablespoons Dijon-style mustard

    1 teaspoons dried basil

    1/2 teaspoon dried oregano

    1/4 teaspoon dried thyme

    Freshly ground black pepper, to taste

    Cook pasta according to package directions. Drain well. In a large bowl, combine pasta, cherries, carrots, cucumber and green onions; mix gently.

    Combine vinegar, oil, lemon juice, mustard, basil, oregano, thyme and pepperin a small bowl; mix well. Pour over pasta mixture; mix gently. Refrigerate, covered, at least 2 hours, or overnight. Mix gently before serving.

    Makes 8 servings.

    CHICKEN SALAD CROISSANTS

    1/2 cup mayonnaise

    1 tablespoon lemon juice

    1/4 teaspoon ground black pepper

    2 cups chopped, cooked chicken meat

    1/2 cup blanched slivered almonds

    1 stalk celery, chopped

    Croissants

    Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.

    In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, and celery. Spread on croissants for a yummy sandwich.

  8. I do these sandwiches and I just love them. Basically cooked chicken, finely sliced celery, walnuts, mayonnaise all mixed together. Butter your bread (wholemeal fab) put the mix on and some rocket leaves. Wrap them up and put them in the fridge for a while (which seems to improve them).  Great, now I'm hungry.  Otherwise, easy peasy way ... go to the deli ... get sliced salami and cheese and sundried tomatoes and olives and ooooh more cheese ....

  10.   if you mean besides the usual how about some sushi and trimmings, or maybe some baby corn dogs with a honey mustard dip, some cold mac salad and chips w/ pickles maybe?

  12. potato salad, baked beans, coleslaw, chips and dip (any variety), fresh veggie dish with dip, cookies, cake, strawberry shortcake (my fave), potato bake, or any casserole anything that is one or two dishes, easy to carry there and easy to pack up to take home, just remember to keep cold food cold and hot food hot.
