Does anyone have quick dinner recipes?

I'm going to college and living in an apartment. I've gotten some recipes online, but I was wondering if anyone had some of their own, they might like to share. I know the basics of cooking, but not much else.

  1. Sure!  Pasta.  Here's what to do:  Boil some penne pasta.  When it's done, drain it.  Put in back in the pot and add olive oil, some crushed garlic cloves (to taste - start with two), chopped green onions (only some of the green part), sliced black olives, a can of petite diced tomatoes, some capers (if you have any), chopped parsley, a squeeze of lemon juice, some basil and oregano, a splash of balsamic vinegar, parmesan cheese and some feta.  Warm it up a bit after you add stuff and serve.  Yum.  It's even awesome cold.


  2. fry minced beef with onions in oil and add S & P then add froz vegies and finely sliced cabbage stir in a chicken noodle soup mix (dry) and add water......Beef chow mein or do chicken and add nuts.  Serve on toast or with rice or with noodles or mashed potatoe.   Any left over is better the next night anyway.  Have a great time in college you probably wont have time to eat ha ha.  From Sandy in Sydney Australia.

  3. Green Bean Casserole (The best, easiest to prepare/cook, with low pricing ingredients)

    INGREDIENTS:

    * 1 can (10 3/4 ounces) condensed cream of mushroom soup

    * 4 cups cooked green beans

    * 1/8 teaspoon pepper

    * 1/2 cup milk

    * 1 1/3 cups French fried onions

    PREPARATION:

    Mix soup, milk and pepper in a 1 1/2-quart casserole dish. Stir in beans and 2/3 cup of the fried onions. Bake for about 25 minutes at 350 degrees F. Top with the remaining 2/3 cup fried onions and bake about 5 more minutes, until onions are lightly browned.

    Serves 6.

    Green Beans Supreme

    INGREDIENTS:

    * 1 pound fresh green beans, cut French-style or 1 pound French-style frozen green beans

    * 1 small onion, halved and thinly sliced

    * 1 tablespoon chopped fresh parsley (or use 1 teaspoon dried)

    * 3 tablespoons butter, divided

    * 2 tablespoons all-purpose flour

    * 1/2 teaspoon finely shredded lemon peel

    * 1/2 teaspoon salt

    * dash of pepper

    * 1/2 cup milk

    * 1 cup reduced fat sour cream

    * 1/2 cup shredded mild Cheddar or American cheese

    * 1/4 cup fine dry bread crumbs

    PREPARATION:

    Cook fresh cut beans until just crisp-tender, or cook frozen beans according to package directions; drain. Cook onion and parsley in 2 tablespoons of butter until onion is tender. Blend in flour, lemon peel, salt, and pepper.

    Add milk; cook until thickened and bubbly, stirring constantly. Stir hot mixture into sour cream and cooked beans; heat until sauce begins to bubble. Spoon into a 1- to 1 1/2-quart casserole; sprinkle cheese over the top. Melt remaining 1 tablespoon butter; toss with bread crumbs and sprinkle over cheese. Broil about five inches from broiler until cheese melts and crumbs brown, about 1 to 2 minutes.

    Serves 8 as a side dish.

    fan the bacon in the pie dish, some will hang over

    layer thin cut potatoes with cheese

    2-3 layers like that

    fold bacon up over the potato and cheese layers

    bake in oven for 45 min at 350

  6. This one was easy and I made it tonight. It is also good for the college budget.

    Tuna Patties:

    2 6oz cans tuna packed in water

    4 slices bread lightly toasted and cut very very small

    2 tbsp melted butter

    1 or 2 dashes each...poultry seasoning, granulated garlic, onion powder, pepper, celery salt.

    1 tbsp dried chives

    2 dashes hot sauce

    3/4-1 cup mayo

    1 cup shredded cheese

    1/2 cup shredded carrots

    Refridgerate for at least 10 min. Then form into about 8 patties and fry till golden brown on both sides.

    I had mine with hot buttered noodles. Or you could drop by spoon fulls into the heated pan. Serve inside boiled and drained jumbo shells. Spoon a little pasta sauce over the top, and sprinkle with a little cheese.

    6 pork chops (approx 5oz each)

    3 Potatoes

    3 Carrots

    1 onion

    2 Cans cream of mushrrom soup

    1 1/2 Cans of Milk

    3 Tbsp Flour

    salt and pepper

    Brown the chops in a skillet that has been lightly oiled. As the chops are browning slice the carrots potatoes, onions, and carrots. Place the browned chops in a 9x13 baking dish.

    Layer on the veggies. In a seperate bowl mix the soup and flour until smooth, then add the milk. Pour over the chops and veggies and then cover and bake for 1 hour at 350. Then remove lid and continue to bake for another 15min.

    Hot Orzo Pasta Salad:

    Boil some orzo while waiting chop some zucchini and yellow crooked neck squash kinda small. Add the veggies the last 3-4 minutes of boiling. Drain and transfer so a serving dish. Add some butter, seasoned salt, and shredded parm cheese. Mix and enjoy.

    Cold Orzo Salad:

    Boil some orzo pasta, drain and cool. Add some chopped red onion, roma tomatoes, corn, feta cheese, and Italian dressing.

    Warm Green and Potato Salad:

    1 lb small red, white or yellow new potatoes

    12 oz fresh green beans trimmed and cut into 1 inch pieces (approx 2 cups)

    1/4 cup dried tomatoes in olive oil drained, and chopped

    1/3 cup bottled parmesan or Italian salad dressing

    4 cups pre-washed Italian salad greens

    4 slices bacon, crisp cooked and crumbled (optional)

    1/2 or 1/4 the potatoes, boil with the beans in lightly salted water until tender. Drain.

    Return to the pan and add remaining ingredients

    Crock Pot Chicken Salsa Curry

    10 chicken thighs-bone in

    1 jar of your fav salsa

    1/2 onion chopped

    1 tablespoon curry (or about 1/2 if you don't like a strong curry taste)

    1/2 cup sour cream

    Place the chicken in the crock pot. Mix the onion, curry and salsa. Pour over the chicken and cook on low for about 6-8 hours.

    When the chicken is done take it out of the crock pot and put on a serving plate. Add the sour cream and mix well. Spoon the sauce over the chicken.

    This would go well with rice or cous cous.

    If you don't have crock pot I would think that you could do this in you oven in a well wrapped pan on low (about 200) check it though since it may cook faster. I haven't done it in the oven but as I said I think it should work. I did it in the crock pot and it was awesome. This recipe is easy to do smaller portions of as well.

    Creamy chicken enchiladas:

    1 pound boneless chicken b*****s diced

    1 8oz package cream cheese cut into cubes

    Flour or corn tortillas

    1 can diced green chili peppers

    ground cumin

    1 or 2 can green enchilada sauce

    Shredded cheese

    Cook the chicken in a skillet and when the chicken is done add the cream cheese, it will melt. As the cream cheese melts add the green chilis, and a couple of good dashes of cumin. Continue to heat on low until the cream cheese has melted.

    Fill a tortilla with the chicken mix, roll and place in a baking dish, Continue until the chicken mix is gone. Top with the enchilada sauce and sprinkle with cheese. Bake at 350 for about 10-15 min or until the sauce is nice and hot and the cheese is golden and bubbly.

    Cook 2 pork chop with the following: 1 red bell pepper cut into 1 inch pieces, 1/2 onion chopped into medium to small pieces, and 1 apple sliced.  Cook the chops in a tiny bit of oil, brown on one side and turn, add the onions, pepper, and apples. Cook until chops are done and the other ingredients are crisp tender. Serve with rice.

    The next recipe is for as many chops as you want to make. Salt and pepper both sides of the chops, place in a baking dish. Top EACH chop with the following

    1 tbsp brown sugar

    1 tbsp ketchup

    1 slice onion

    1 slice lemon

    Bake at 350 for about 30-45 min depending on how many chops, and how thick they are. This dish creates just a tiny bit of a nice sweet tangy sauce. You can simmer an extra serving or 2 the topping ingredients on the stove top with a little water if you would like. I serve this dish over rice also. Different sounding but very good!!!


  7. If your moving into a new apartment you can always try buying those meals that you put into the microwave. Im too high maintenance for that kind of stuff but you may settle for it. Also my brother eats these instant Ramen noodles. You just add hot water, and he says they are good
