Easy.

It is sell, and usually is NOT a cheese sauce, it is "crema" or media crema" (cream or half cream, but I have never saw it in US. I didn't notice you don't use it as much as we do). In spain it is called "nata". It is only the extracted butter fat before do the butter, no cheese procedures, only extracted from the milk.
