Question:

Does anyone have veg recipes for a carnivore?

Almost everything my husband eats is meat. He'll try some things, but he doesn't like most vegetarian recipes. Also, he is a big, muscular guy who lifts weights everyday, and needs a lot of protein. Does anyone know what he might eat that will fill him up, taste good, & not contain meat? Protein shakes only go so far.

I just tried a recipe by Rachael Ray.  It's called Spaghetti alla Ceci.  It turned out really good.  It's spaghetti w/chick peas, mixed with crushed tomatoes.  My husband and I really like it and he's a big meat eater too.  Here's a link to the recipe.  It's a little on the spicy side, so if you don't like spicy things, you can adjust the red pepper flakes. A serving of chick peas has about the same amount of protein as an egg.  Hope that helps.

  2. Ugh. I hate cooking for people who are convinced that there's no nutritional value in anything that comes from a plant. However, it's not too hard. Just use a ton of eggs and cheese and most of them are convinced that they've gotten enough protein.

    One of my favorites is cauliflower with sundried tomato, chili, and cheese sauce. It's sooooo goood.

    You could also do something Middle-East inspired, like a platter with hummus, baba ganouj, falafel (tasty!), tabouleh, etc.

    And the people who suggested veggie Mexican and Italian are right on... since there are "standard" meatless dishes in ethnic cuisine, people don't feel deprived. They're just eating "normal" food.

  3. my bf was practically a carnivore when we met... and now he's practically a vegetarian :)  and he does so voluntarily (started before we even lived together).

    he's a big fan of the "fake" meats... the soy versions of ribs, hot dogs, burgers, buffalo wings, sausage, bacon, etc.... his favorite is the sausage and the ground meat.  i recently found soy italian sausages and he was happy with them.  just use the stuff like you would use real meat.  we like to have a mexican night and make tacos, burritos, and nachos with teh soy ground meat.  i make a sausage sandwich for breakfast using the sausage patties.  the hot dogs are really good (morningstar farms brand- we both LOVE them).  

    i made this for dinner not long ago and he enjoyed it...

    pasta (i used whole wheat but whatever you like)

    alfredo sauce

    Quorn brand chicken pieces (i forget what they're considered, but it's not the cutlets... mayeb tenders? they're small like nuggets)

    morningstar farms brand bacon

    and a variety of veggies... i think i used tomatos, broccoli, onions, garlic... spinach?  whatever i had lol

    anyway, a side of garlic bread and he LOVED it (so did i haha) i'm not a huge fan of the veggie bacon but mixed in a meal like that with that chicken it was good. he actually said that Quorn brand chicken that if i wasn't the one cooking it he would of thought it was real chicken.  so maybe give that brand a try.  i've heard someone else say they like that brand too.

    he also likes these garlic portobello mushroom burgers that i foudn at bjs. dunno the brand.  but they're thick and "meaty"

    your husband, like my bf, also might like the fact that the "fake" meat is healthier and has a lot less fat than real meat.  if he's into keeping in shape and being healthy that might influence him.

    i havne't had too much success with tofu.  i'm not an eggs person, so i made for breakfast scrambled tofu (like eggs) with ground "sausage" and cheese and some veggies and he did like that.

    and pasta salad with a lot of beans is good too.

  4. There are lots of good analogues on the market, too many to list here.    I think Amy's has a 1/4 pound veggie burger, but I haven't tried it yet.  Tofurkey makes vegan sausages that are pretty good.

    You an also try making your own seitan and using it in a "meaty" recipe.  Seitan is often called "wheat meat" and is made from wheat gluten.

    And check out "The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson.

    For a light snack, he can check out Builder's Bars by Clif.  Each bar has 20 grams of protein.  Most Clif Bar products are vegan.

    I'm not quite vegetarian but I love vegetarian tacos!

  6. Cheese Pizza?  Grilled Cheese? macaroni and cheese? Cheese lasagne?

    All of that has plenty of protein and no meat.  If you use high protein pasta you can make all kinds of pasta dishes with vegetables that will be healthy for you manly man.
