Does anyone have veggie packed recipes?

Hey, I am looking for healthy breakfast recipes, preferably that incorporate veggies and any others that have vegetables as the main course. Websites, magazines that are good about a variety of vegetarian recipes. I am not a vegetarian, but I am trying to eat less meat, so some meat is okay. I just want vegetables to be the bulk. Thanks in advance for your help!!!

  1. Breakfast: a sauteed onion an pepper omelet.

    Lunch: Homemade fresh vegetable soup.

    Dinner: Grilled Chicken with grilled fresh veggies, like asparagus, zucchini or corn.

    2 eggs, beaten with 2 tablespoons skim milk or water added when beating

    1/ 4 cup chopped onion

    1/4 cup chopped peppers(hot or mild, your choice

    1/4 cup chopped tomato, seeds removed

    1/4 cup shredded cheese, if desired

    fry omelet in usual fashion, with veg and cheese as the filling.

    other variations as follows:

    chopped spinach and chipped tomato

    chopped mushrooms and chopped onion

    spicy black beans and tomato and onions

    broccoli and cheddar

    cauliflower, roasted red pepper and fresh mozzarella

    basically, the list is endless for omelet filling.  To really cut the fat  use egg beaters or just the whites.
