I've compiled a list of a few resources to get you started. It's a very interesting field, and you'll end up finding that much of so-called "modern" medicine is simply based on chemical formulations of folk remedies that have been around for countless eons.

The University of Hawaii is the only place in the US that offers a degree in ethnobotany -- their program specializes in special medical training programs in coordination with the School of Allopathic Medicine, Pharmacy, and Nursing and the School of Naturopathic Medicine, Acupuncture, and Herbalism.
