Does anyone know a recipe for Chinese chicken fried rice?

Im addicted to chicken fried rice from my local takeaway. I would love a recipe as close to that as i can?

All it has is rice, peas, chicken and egg but there's a distinct taste which i cannot master.

  2. I dont know about teh oil, but just let me in on a little secret.

    Cook the rice the night before and leave overnight in the fridge before you attempt to fry it, otherwise you will be left with a goo-ey mess.

    Good question though, I was wondering how to make it taste more authentic as mine just tastes like omelette with egg, will have to keep a look out for this msg stuff.

  3. it's the chinese soy sauce, its added when frying the rice, it can also be beating into the eggs and pour over the rice while frying, remember low flame stir constantly till almost dry.

  4. When I was a cook at a Chinese restaurant years ago we would season the fried rice with equal amounts of sugar, salt, and msg. Then we would add black molasses, just enough to give it some color.

    At another restaurant we would season the rice with only soy sauce.

    If you use soy sauce get the kind from the Asian grocery, I believe the brand name is 'Pearl River' or something like that but it's called 'Superior Soy Sauce'.

    When I fry rice at home I use peanut oil, get the wok smoking hot and cook the eggs first, remove the eggs, add more oil and fry the rice. When the rice is good and hot add a little superior soy sauce and a half teaspoon of chicken boulion (sp) powder and also add the meat and whatever vegetables I want to put in.

    I don't agree with some other answerers who recommend cooking over low or medium heat. When you go to a restaurant they cook over high heat especially with fried rice, you want the oil starting to smoke before you start.

    Chinese Chicken Fried Rice

    1 egg

    15 ml water

    15 g butter

    15 ml vegetable oil

    1 onion, chopped

    315 g cooked white rice, cold

    30 ml soy sauce

    2 g ground black pepper

    140 g cooked, chopped chicken meat

    DIRECTIONS

    In a small bowl, beat egg with water. Melt butter in a large skillet over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds.

    Heat oil in same skillet; add onion and saute until soft. Then add rice, soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then stir in egg. Serve hot.

    or Chinese Chicken Fried Rice

    8 ml sesame oil

    1 onion

    680 g cooked, cubed chicken meat

    30 ml soy sauce

    2 large carrots, diced

    2 stalks celery, chopped

    1 large red bell pepper, diced

    110 g fresh pea pods, halved

    0.5 large green bell pepper, diced

    950 g cooked white rice

    2 eggs

    80 ml soy sauce  

    DIRECTIONS

    Heat oil in a large skillet over medium heat. Add onion and saute until soft, then add chicken and 2 tablespoons soy sauce and stir-fry for 5 to 6 minutes.

    Stir in carrots, celery, red bell pepper, pea pods and green bell pepper and stir-fry another 5 minutes. Then add rice and stir thoroughly.

    Finally, stir in scrambled eggs and 1/3 cup soy sauce, heat through and serve hot.

  9. i heat up the oil with a small amount about half a teaspoon of chinese 5 spice mix that gives my chinese fried rice a really good flavour,also the oil i use is peanut oil

    4 cups cold cooked rice

    8 ounces cooked chicken (or substitute cooked turkey, etc.), chopped

    2 eggs (more if desired)

    1/2 cup green peas

    1 medium onion, diced

    1 green onion, diced

    Seasonings (add according to taste):

    Light Soy Sauce

    Oyster sauce

    Salt

    Pepper

    Oil for stir-frying, as needed

    Preparation:

    Beat the eggs lightly with chopsticks, add a dash of salt (Add a bit of oyster sauce if desired).

    Chop the chicken meat and dice the onion and green onion.  

    Heat wok and add oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once.  Cook the other half the same way.  Cut the egg into thin strips, and save for later.

    Stir-fry the onion on high heat for a few moments, remove and set aside. Do the same for the green peas.

    Add oil, turn down the heat to medium and stir-fry the rice.  Add the soy sauce, salt, pepper and oyster sauce.  Add the chicken, onion and green peas and combine thoroughly. Serve chicken fried rice with the strips of egg on top and the green onion as a garnish. (Alternately, you can mix the green onion and egg in with the other ingredients).
